Bruschetta is one of those snacks that everyone loves. It's the perfect appetizer for get togethers or dinner parties because it's super easy to whip up and even easier to eat. 

I've whipped up a stove top version to keep the oven from running in the dead of summer. All it takes is toasting up your crostinis on the stovetop for a few minutes per side and rubbing them with cloves of garlic. The garlic flavour seeps into each crostini leaving every bite with a garlicky undertone. 

Topped with a super simple zima tomato bruschetta and a rich, tangy smear of goat's cheese, these snackable bruschettas will be gone as quickly as they're put out!

ZIMA TOMATO & GOAT'S CHEESE BRUSCHETTA

Using the oven in the summer isn't always our first choice when it comes to cooking methods because it often heats up the house when you're fighting to keep it cool. That's why I whipped up a batch of bruschetta on the stovetop and they were just as wonderful as they'd be out of the oven.
Crusty baguette fried until lightly crisped on both sides, topped with tangy goat's cheese, and a zima tomato salad. The fresh salad cuts through the richness of the goat's cheese for a perfectly balanced snack you'll definitely want seconds of.

MEXICAN POTATO HOMINY CASSEROLE

What do you do when you have a can of white corn hominy and no ideas? You make a casserole!
Potatoes, white corn hominy, black beans, and other veggies, are tossed in a creamy, mexican inspired sauce and baked under a layer of cheese until bubbly and delicious. What's not to love?

Watermelon & Feta Salad

I've seen many a recipe that includes watermelon in savoury dishes and I've never really thought it was something that I was going to like. That is, until I tried watermelon paired with feta cheese. What a refreshing and delicious combination!

Watermelon is such a summery treat that it's the perfect addition to a summer fresh salad like this one. Fresh watermelon, cucumber, mint, and parsley, tossed together with lemon juice, oil, and a little salt to bring everything together. 

The combination of sweet and salty is quite delicious and the salad itself still provides you with that refreshing watermelon quality you look for when enjoying the pink fruit, but it's elevated by all of the other ingredients it is paired with.

Chopped Salad with Bocconcini, Feta, and White Wine Vinaigrette

I am obsessed with chopped salads. First of all, I love the colours. Everything cut into small pieces really allows for each and every colour to pop in the bowl. Secondly, I love that each bite has a little of every vegetable in it. You can taste all of them together at once which is lovely. 

For this chopped salad, I've included some tender bocconcini, salty feta, and my white wine vinaigrette recipe from a few weeks back. Here's the link to the vinaigrette!

CHOPPED SALAD WITH BOCCONCINI & WHITE WINE VINAIGRETTE

As you all know, I love a good chopped salad. I love being able to get a little of everything in every bite. This chopped salad features veggies like bell peppers, zima tomatoes, and cukes, along with tender bocconcini, and my white wine vinaigrette I featured last week. It all comes together for a fresh and delicious chopped salad that makes for the perfect side to something savoury.

WATERMELON & FETA SALAD

Until this recipe, I had never actually paired watermelon with anything savoury. It's always been something I wanted to enjoy as it was, sweet, fresh, and summery. However, I decided to whip up a fresh watermelon salad and I was pleasantly surprised at how much I enjoyed the sweet and salty aspect of this salad. Fresh, succulent watermelon, crunchy cukes, fresh parsley and mint, and salty feta cheese, tossed in EVOO and lemon juice. The salad screams summer and is dying for a spot on your table <3

Baked Eggs in Tomato Sauce

Getting my hands on local, organic, free range eggs is always an exciting time for me. I gave up eggs for an extremely long time because I refused to purchase factory farmed, store bought eggs, so now that I've sourced a few places to get quality, cruelty free eggs, I couldn't be more excited.

This dish makes use of my pea pesto recipe from earlier this week along with either scratch made tomato sauce, or ready made jarred sauce. All it takes is lining a baking dish with sauce, cracking some eggs, dolloping some pea pesto, and baking until ready. It's such a simple, yet satisfying dish, I think you guys will love it.

Fresh Green Pea Pesto

I always have a jar of pesto handy because it always seems to be the perfect addition to a variety of meals. It adds the perfect amount of herbaceousness and green flavour to whatever you're adding it to. 

When I feel ambitious, I'll whip some up to have on hand. Traditional pesto can be quite costly as pine nuts are very expensive, so I like to play around with what my pesto is made up of. As long as you stick to the basics of pesto which include fresh herbs, nuts or seeds, lemon juice, and parmesan, you can add special little things to it to make it unique.

At my work, we make a vegan green pea pesto that I absolutely love. I decided to whip up my own version that includes parmesan cheese. The resulting pesto is vibrant from the fresh spring peas, flavourful, and super simple.

GREEN PEA PESTO

I always try to have some form of pesto on hand, whether it's from the jar or freshly prepared. It's the perfect addition to soups, sauces, and even as a stand alone component of a dish.
I've whipped up a fresh green pea pesto that utilizes fresh spring peas for a vibrant, flavourful pesto that's fresh and delicious.

Getting my hands on free range, organic eggs is such a treat and I am finally trying to prepare them in new ways. My first dish with this week's pea pesto is a baked eggs dish that's so super simple. Tomato sauce, eggs, and pea pesto, baked under a layer of grated parmesan. Keep a loaf of crusty bread handy for dipping until all of the sauce is gone!

​Secondly, having pea pesto on hand is great for a quick weeknight meal. All you need is some pasta and pasta water and you've got a meal in itself! 2 great ideas with one pesto recipe!

Animal News Recap - Episode 9

I've finally finished filming a new video and can't wait to get your opinions and comments <3 In a perfect world, I'd be able to to upload 2 - 3 videos a month but unfortunately life doesn't allow me the time to do that. This will be the last video I upload without a video editing program which I am currently scouting out right now. I found a few programs I'm interested in and will be doing more research this week to find out which program will be my best option!

1. Another B.C. Chicken Farm exposed for abhorrent cruelty - Elite farms was exposed for seriously gruesome animal cruelty after a video emerged showing workers throwing, kicking, punching, making sexual gestures, and torturing chickens. The owner has since fired these individuals but animal rights groups suggest this is too little too late. Hear what I have to say as well as a few tips for purchasing eggs that DON'T come from any of these horrible factory farms!

2. Kenya making death penalty a reality for poachers - After unsuccessfully abolishing poaching with their current penalties in place, Kenya has decided to move along a law making poaching punishable by death. Poaching has steadily declined in the last 4 years thanks to current efforts so my question to you guys is, should this next step even come to be? Should we punish poachers by ending their lives or should we take solace in knowing the current methods are working? The death penalty is sever and I'm going to discuss my thoughts on this topic.
