1. Pasta Primavera - A rich and creamy sauce that I've amped up with a little surprise. It's a great trick for creamy sauces! 2. Warm Roasted Potato Salad - A trio of potatoes dressed in a light, balsamic vinaigrette. A flavoruful salad that takes no effort at all! HAPPY VEG

It's Halloween weekend and with that comes scary costumes, sugary treats, and celebrations. Have a safe and enjoyable Halloween weekend with your families and friends!
Investigate your local grocer, most grocers offer a selection of hot sauces from around the world. Mexican hot sauces are probably my favourite and I suggest them for this chili especially. You could also use a traditional Frank`s style as well but don`t limit yourself!

November marks 1 year since I began my HAPPY VEG journey. What a wonderful achievement and I couldn't be more proud. I am planning something special for the month of November. Is this surprising? Want to know my opinion? There's a moral to this story and I don't even need to get all preachy about vegetarian / vegan diets, eating healthy, or exercising. READ YOUR INGREDIENTS! When you are shopping, it can be a hassle to read your labels but it is crucial to really getting the best version of the product you are purchasing. Ingredients are posted on almost every product available and it is important to be aware of what's in your food.
When it comes to processed foods, the problem is the massive amount of additives, preservatives and extras that are used to manipulate and process the original product. What's the moral? If your ingredients list is 25 items long and it's supposed to "Beans" in the can, that's usually a problem. If you can't pronounce several of the ingredients on the list, that may also be a problem. (Think Titanium Dioxide, like no thanks!) Look for the purest form of everything you eat, fresh is best! Steer clear of anything that's heavily processed and also use Google! This chili is so delicious I know you'll all love it! A few tips. . . * After cooling, refrigerate for up to 3 days. It freezes well also, use up within 6 months. * This chili is mildly spicy, want a bit more kick? Amp up the chili powder / cayenne to 1/2 tsp. instead and you'll taste a bit more wham bam thank you ma'am! * Any bell peppers will do, colours don't affect flavour too heavily. Try and get two different ones simply for the colour and visual appeal of the chili! HAPPY VEG
