For my final contribution to soup month I've actually decided to do something a bit different. While I was sent a variety of soup recipes that were great I decided that this idea would be fun after becoming inspired online.
BBC Good Food calls it a "Versatile Vegetable Soup", basically it is a formula for making a soup out of whatever veggies you have left over in the fridge. I have always been hesitant to try and make soup from scratch without a recipe because I never really knew what the vegetable to potato to stock ratio was.
This week I'll be using these exact measurements to create a soup out of whatever veggies I have in the fridge!
I love the idea of being able to whip up a soup with whatever I have around and actually being able to follow through because of this generic recipe. This soup is a blank canvas which makes it fun to also play around with herbs and spices.
Hopefully this turns out to be a hit !

I've yet to recreate that black bean soup I had in Toronto during Pride a few years back. With that said, the soup I DID create is in a whole other dimension ! It was flavourful, it was hearty, and it was super easy using the slow cooker. Nothing like hitting the "On" switch and ending up with a delicious meal !

It's no secret Mexican inspired food is my absolute favourite food and in spirit of Soup season I found this recipe online that looks absolutely delicious !
I can already see what I'd change from the recipe so I'm excited to give this one a try and put a Happy Veg Twist on it ! Stay tuned !

I changed an awful lot about the original recipe and I think the end result was just wonderful. Sweet and creamy, this soup is a hit !
After I made the recipe I also decided many people may find the soup a bit sweet, if you think you ,might be one of those people LISTEN UP! Substitute whole kernel corn as opposed to the sweet corn.
Even try using half sweet and half of the unsweetened for a whole new flavour.
I found the sweetness to be just right, maybe a little extra fire would have been nice but the soup is flavourful, creamy, and mildly warming.

Here's a little meat free motivation for y'all ! Delicious chick'n burger on a whole wheat bun with fresh green leaf lettuce, tomato, and red onion. Served with a delicious Tzatziki Potato Salad !
