Saffron Risotto

People are often intimidated by risotto, but I'm confident that once you actually try it, you'll see how simple it is to make. All it takes is a few simple ingredients and patience. Trust me, you'll see just how easy it is with my Saffron Risotto!

This simple risotto features heat from pepper flakes, nuttiness from grana padano, and the mild flavour, and deep colour of saffron. As the saffron cooks, it bleeds out a yellow colour that transforms the risotto in to a golden, gorgeous skillet of creamy rice.

2022 - A Year In Recipes

Penne Ragu with Sausage

There are certain noodles that are expected to be served with certain sauces, but that won't ever stop me from eating a pasta dish. So y'all, here's my Penne Ragu with Sausage; a delicious, meaty skillet full of veggies, cooked down for hours until rich and flavourful.

The key to a good ragu, bolognese, or sauce even, is how long you're willing to cook it. The longer it cooks down on a low heat, the more flavourful it will become. This ragu cooks anywhere from 1 1/2 to 2 hours, but you could go even longer if you can endure smelling that delicious sauce simmering.

New York State Bans Cosmetics Tested on Animals

New York State will become the 10th U.S. State to ban the sale of cosmetics tested on animals. Effective January 1st, companies will be prohibited from selling cosmetics tested on animals and manufacturers must use non-animal testing methods. Cosmetics animal testing is disgusting and exploitative and punishes animals with repeated tests that leave them frightened or in pain. No beauty product is worth the suffering of animals that are discarded like trash after their usefulness runs dry.

Cheesy Chipotle Potato Tacos

Taco Tuesday vibes!!!

I've got the perfect taco Tuesday tacos for you guys with my Cheesy Chipotle Potato Tacos. These tacos are so flavourful from that smoky chipotle along with all of the other spices that coat out skillet potatoes. I toasted some of the chipotle & chili powder to bloom and bring out their intensity, which obviously added additional flavour. Once the taters are cooked, they're buried under a blend of white cheddar & Monterey jack until gooey and melty.

The garnishes are optional but I'd recommend cabbage for that welcome crisp and chipotle mayo to reinforce that chipotle vibe.

Sausage, Egg & Cheese English Muffins

One of the things I appreciate the most about the weekends is being able to create breakfast / brunch recipes. I'm guilty of skipping breakfast most days, (shame on me, I know!) so when I have the opportunity on the weekend, I'm always excited.

I whipped up some super simple brekkie sams on English muffins. Perfectly fried eggs, plant-based sausages, monterey jack, lettuce, chipotle mayo, and pea shoots. They come together easily and don't require much effort. What's better than that? Head to the RECIPES page.

New York Bans Sale of Dogs, Cats, and Bunnies from pet Stores

New York Governor Kathy Hochul, signed legislation that will effectively ban the sale of cats, dogs, and bunnies from pet stores. The legislation will come in to effect in 2024, allowing New York's approximately 80 pet stores to accommodate the change. Learn more under the ANIMAL NEWS tab.

Brussel Sprout Gratin

I love brussel sprouts you guys. I've roasted & smashed hundreds of sprouts since I started this blog and honestly, roasting them is one of my favourite ways to enjoy them. However, when they're baked in a bath of cream and cheeses, they're utterly divine.

My brussel sprout gratin is the comforting side dish you need in your life. Tender sprouts, sliced onions, creamy, garlicky, buttery sauce, nutty grana padano & gruyere, and a crispy, golden brown crust. I'm telling you, these brussel sprouts are so naughty. They're rich and delicious and quite easy to put together.
