New Report Suggests Canada Has Thousands of Species in Danger

A new wildlife survey paints a bleak picture for Canada's wildlife, suggesting that up to 4883 species are currently threatened in our country. As we continue to bicker about protecting land, whether climate change is real, or whether animal ag is destroying our planet, everything around is dying off. We can't argue against sea ice melting when it's actually melting and polar bears are struggling. Our inaction and negligence is pushing so many species towards inevitable extinction.

Vegan Mushroom Stew

Stew is such a cozy meal. Much like a good soup, there's something about a steamy, hearty bowl of stew that provides comfort and warmth from the inside out. This is particularly lovely when the weather on the outside is cold and dreary.

I whipped up a vegan mushroom stew that provides those comfort vibes. Notes of rosemary , thyme, and balsamic, and cremini mushrooms in every delicious bite. How you serve this is up to you! I served it up with baked potatoes because they're the perfect vessel to me, but you could swap out your carb of choice!

Lemon & Herb Skillet Roasties

Consider these the potatoes you can literally eat with anything. I love me a perfect tater companion to a good sandwich, or as a best friend to whatever my main course may be. Frankly, these potatoes will go with whatever you're eating, or, even as a stand alone snack should you desire an entire skillet of gloriously golden taters.

Baked up in a combination or oregano, pepper flakes, sumac, and fresh thyme and smashed garlic. Once perfectly roasted, they're finished with a welcome fresh addish of parsley, chives, and lemon zest. Some crumbled feta on your finished plate is the cherry on top of this golden sundae.

Cauliflower Mac & Cheese

Who's ready for a little mid-week mac and cheese pick me up? As you know by now, I love me some mac and cheese. I love it Southern style with eggs, roux based with flour and butter, any variety of cheese, ugh, there's really no mac and cheese that doesn't give me that twinge of excitement.

I whipped up a rather standard egg based mac and cheese with macaroni noodles, and a creamy, eggy mixture to hold everything together. We've got cream cheese for a smooth, creaminess, extra old cheddar for flavour, and a habanero cheddar for additional flavour and some melty vibes. Then, we just fold in some blanched cauliflower and voila! We've got a lusciously creamy, perfectly cooked cauliflower mac and cheese.

Creamy Leek & White Bean Soup

It's soup season and for me, that means I'm eating soup as often as possible. While I enjoy soup throughout the year, it just hits differently in the winter. There's a certain air of comfort about it that the winter brings out.

I'm serving up a Creamy White Bean & Leek Soup that I just know, you guys are going to love. Smooth & creamy white beans, sweet and subtle leeks, and a creamy soup base with pops of heat and nuttiness. It's rich, comforting, and easy to put together.

Bringing Back Grizzles to the Northern Cascades of Washington - Is there a point?

The National Park Services & USFWS are currently investigating the possibility of bringing grizzly bears back to the Northern Cascades of Washington, an area they once roamed before being hunted to near extinction. While I applaud this news, I can't help but look to wolves and the relentless assault they're currently under and ask myself, will we not watch the same thing happen to grizzles?

Cheesy Skillet Cauliflower Steaks

K, so once I tried those viral parmesan potatoes, I was inspired to use that method on other vegetables. What veggie wouldn't benefit from a crispy, cheesy layer of crust I wondered? As it turns out, cauliflower steaks are fabulous with a gloriously crispy, cheesy crust. Who would've guessed? I did...

Anyways, it starts with a hot skillet, some butter, and a cheesy mixture of grana padano, white cheddar, and some seasonings. Then, we nestle our steaks in to our cheesy layer, top with gruyere, and bake until tender and ridiculously cheesy. I can honestly say that these cauli steaks were perfectly cooked, so tender, and so cheesy and delish.

The Government Needs to Step In On Pet-Free Rentals

Shelters all across Canada are filling to capacity and the leading cause of these surrenders is a lack of affordable, pet-friendly accommodations. Why are landlords allowed to ban pets when there are solutions available to protect them? When children can be equally, if not more so destructive than animals, it's immoral and unacceptable that landlords have the power to ban pets. The Government needs to step in and fix this problem because shelters and pet owners are struggling.

One Pot Mozza Tortiglioni Skillet

Can you think of anything better for a Meatless Monday than my One Pot Mozza Tortiglioni Skillet? First of all, it's meatless and delivers on that meat free satisfaction. Secondly, it's a one pot meal which means easy peasy to make and even easier to clean up. That's a total Monday vibe.

This recipe is modeled after my mother's cheesy spaghetti skillet. Although I've only ever used spaghetti, I thought it would be fun to try that same method with a different shaped nood. Although the tortiglioni took a bit longer to cook, the end result was as cheesy and delicious as I could have hoped.
