Buttery Garlic & Herb Baby Buttons

I'm the first person to admit that mushrooms are not always my fave thing to eat. This is typically relegated to the exotic ones that kind of look like aliens or perhaps like they were discovered under water on some coral reef or something. They're just too weird; but creminis / buttons? Love.

This skillet is a super satisfying one for sure because these button cremini mushrooms are so buttery and addictive. They're great as an app served up with some crusty bread for dipping in that buttery pan sauce, or even as a side to your main course.

The ProTECT Act Introduced in US To Protect Imperiled Species

The ProTECT Act was introduced in the U.S. and this incredibly crucial bill MUST PASS if we are truly committed to conservation. The Act would ban the import of hunting trophies from species listed as threatened or endangered, and would ban the slaughter of any imperiled species on U.S. soil for the purpose of trophy hunts.

Potato Risotto

This idea literally came to me because I had potatoes and absolutely no idea what to do with them. Out of nowhere I thought hmmm, arborio rice is starchy and so are potatoes so in theory, a potato risotto should work out. Ugh, I'm so glad I tried this out because these are the dreamiest, creamiest, most delectable taters I've ever made y'all!

Much like a standard risotto, we start by cooking some garlic & onions in a combination of butter and oil. The potatoes are added along with wine that simmers off. Then, ladle after ladle of broth, reducing until creamy, and continuing until those taters are smooth and perfect. Finished with cheddar, grana, and parsley.

Cheesy 3 Bean Chili Gnocchi Skillet

I am literally obsessed with this recipe and I think you will be too. With this one, you actually get two recipes in one; my Rich 3 Bean Chili, and a variation of my cheesy skillet shells featuring plump potato gnocchi. They pair BEAUTIFULLY together.

It all starts with a classic chili recipe. I omitted plant-based meat in favour of beans. With that being said, super important this has time to cook down and really intensify in flavour because that plant-based meat usually provides a good amount of flavour. Seasoned with cumin, chipotle, Tex-Mex, and other seasonings, it's a delicious, rich bean chili.

Then, we just make a quick roux, create our cheesy sauce, and boil up some gnocchi. I broiled cheese on top of the gnocchi, topped it with some of that rich chili and garnishes, and served it up.
The flavourful bean chili cuts through the rich, cheesiness of that skillet gnocchi so perfectly. The raw jalapenos provide both crunch and heat and the sour cream works to temper everything at once. This skillet meal is to die for you guys so head to the RECIPES page and get on it!

Coconut Masala Butter Beans

These flavours are some of my absolute favourite. The smell of masala pasta simmering is so aromatic and inviting to me. So many deep, rich spices infused in this dish, it was hard to stop eating it.

Basically, we're making a creamy coconut sauce, simmered down until rich and creamy. There's heat from chilis and pep flakes, richness from coconut milk, smooth and creamy butter beans, and tons of flavour from the Masala paste / seasonings. No plates required, simply warm up some naan and tear in to the skillet. Easy clean up too!

Unstuffed Shells Skillet

I'm obsessed with this cozy skillet and you guys will be too. Growing up, stuffed shells was one of our favourite things my mother made. Bubbly saucy perfection, cheesy stuffed pasta, all the good things. So, why not try out an unstuffed version, am I right?

I made my typical tomato sauce but only blended half of it which left some chunks of veggies and tomatoes for texture. I whipped up a fresh ricotta "filling" and instead of stuffing shells, I just dolloped the filling around the skillet. Slapped it under the broiled and that's it.

3rd Super Tusker Gunned Down by Trophy Hunters in Tanzania

A 3rd "super tusker" elephant has been discovered gunned down by a trophy hunter in Tanzania. Alarmingly, 3 more licenses have been issued since March 10th indicating another 3 of these majestic animals will soon be shot and killed for fun. Have we no conscience? Do we not realize that trophy hunting is abhorrent and is contributing to the inevitable extinction of elephants?

Creamy Cajun Sausage Gnocchi

Not gonna lie you guys, this was literally the tastiest recipe I've put together on a whim in years. Everything about this creamy, ridiculously flavourful skillet is utter perfection, you'll see when you make it for yourself!

Featuring Beyond Meat Hot Italian sausages, the sauce is dreamy and creamy and robustly flavoured by a simple Cajun seasoning blend, the sausages, and a few add ins along the way. The sausages lend so much flavour to the sauce, it's unbelievable.

Finished with some fresh green parsley and grana padano; this creamy Cajun Gnocchi skillet is one of my favourite recipes I've created in a long time. Don't just take my word for it! Head to the RECIPES page and make it for yourself!

Fiesta Egg Rolls

I really don't know why I was so intimidated to make egg rolls because they couldn't be easier. At this point, I'm excited to make a whole bunch of different varieties of egg rolls!

These came to be because I had leftover taco filling and thought it would be fun to throw that together with some cheese and stuff some egg rolls. The rolling process is simple, much like a burrito, you just want to be sure the filling is properly sealed which I went over in the recipe.

I served these up with some leftover pico and guacamole I had on hand. They were so golden brown and crisp, literally addictive & the filling was so cheesy and savory. I couldn't be happier with how these turned out! Head to the RECIPES page!

Blistered Shishitos

Easy peasy appetizer alert you guys! Literally, 5 ingredients and 15 minutes of your time and you're serving up these delicious, blistered shishito peppers.

Shishito peppers are extremely mild and you guys know I just need some spice at all times lol I ended up dressing them in EVOO, Himalayan salt, and pepper flakes for a little heat. Then, you just toss them in a hot skillet and let them blister on all sides until nice and tender with some good charring. Finish them with a squeeze of lemon and serve them up!
