Here we go y'all, another Meatless Monday and another meatless meal y'all can throw into your  rotation! If you loved chicken parm growing up, you're going to love today's recipe!

It all starts with a perfect tomato sauce, one that is blended because blended sauces are the best. Once we have our beautiful sauce, we're cooking up some whole wheat spaghetti and baking off our GARDEIN patties. I used the turk'y patties because that's all I had, but the chik'n patties would be perfect as well (obv). I melted a little pizza mozz on each patty prior to serving it up.

Tossed spaghetti, crispy patty, melty cheese, and some finishing herbs / grana padano to round everything out. Such a fun dish that's ready in under 50 minutes from start to fin. Head to the RECIPES page!

6 Native American tribes Sue State of Wisconsin over Wolves

Two More Big Name Brands Ban Fur In their Future Designs

Yves Saint Laurent and Brioni brands have pledged to go fur free beginning with their fall 2022 lines. They are added to a rapidly growing list of big name brands that are banning the use of fur, signaling a continued downward spiral for the vile fur industry. Learn more under the ANIMAL NEWS tab!

Spicy Pesto Smashed Brussel Sprouts

If you guys haven't tried smashed brussel sprouts yet, what are you waiting for? The method made famous by potatoes, is literal perfection for brussel sprouts. 

We bake them until they're almost cooked, smash them using a drinking glass, and slather them in a spicy red pesto vinaigrette. The vinaigrette cooks out into the sprouts and gives them a glorious red crust. Finished with some grana padano cheese and fresh herbs, they're absolutely delicious.

I'd even go so far as to say that they're quite addictive. After I tested the recipe, I ate the entire pound of sprouts myself.

Montana & Idaho Will Decimate Up to 90% of Grey Wolves This Season

It took 40 years to see grey wolves delisted from the Endangered Species Act and in under one month, both Idaho & Montana will permit the slaughter of nearly 90% of their state's wolves. Baked Medley Tomatoes & Eggs

Who's ready for brunch?
Today's brunch recipe couldn't be easier and honestly, couldn't be more delish in its simplicity. Fresh medley tomatoes tossed in red wine vin, EVOO, and pepper flakes along with shallots, garlic, and basil. We're roasting until the tomatoes start to burst before cracking in some eggs and topping with some freshly grated grana padano. 

Served up with some toasted / grilled bread for dipping, this brunch recipe is super simp and so fresh. The tomatoes paired with that runny yolk on a perfectly toasty slice are literal perfection.

Annual Dolphin Hunt on Faroe Islands Sees Record Number of Dolphins Killed

Over 1, 400 white-sided dolphins were killed Sunday on the Faroe Islands as part of their annual dolphin hunt. These highly intelligent, social, and empathetic mammals are driven to shallow water where their spine is severed as they bleed out into the water. Mom's Spicy Mozza Sketti Skillet

Cook Time: 30 - 35 Min

Yields: 4 + Servings

WHAT YOU NEED

  • 2 Tbsp. EVOO
  • 2 Tbsp. Chili Oil
  • 2 Yellow Onions, diced
  • 2 Red Bell peppers, diced
  • 5 cloves Garlic, crushed & minced
  • 227g Cremini Mushrooms, quartered
  • 340g Impossible Beef
  • 1 Tbsp. Tomato Paste
  • 796ml Cherry Tomatoes (Pomodorini)
  • 1 C + Water
  • 1 1/2 C Broken Spaghetti Noodles
  • 1 Tsp. Italian Seasoning
  • 1/2 Tsp. Dried Oregano
  • 1 1/2 Tsp. Red Pepper Flakes
  • 28g Fresh Basil, chopped / chiffonade
  • 1 1/2 C Pizza Mozzarella, shredded
  • 1/4 C + Grana Padano, grated
  • 1/4 C Fresh parsley, choppped
  • 1/2 Tsp. + Sea Salt

DIRECTIONS

  • Begin heating the EVOO, chili oil, pepper flakes, oregano, and garlic, in a large, deep skillet set to medium. Once heated, let the garlic sizzle for about a minute without browning. Stir in the onion, bell pepper, and season with sea salt. Cook about 5 minutes before adding the mushrooms and a little more salt. Cook until mushrooms release their liquid. Push veggies aside and brown the Impossible beef, breaking it up into smaller crumbles as it cooks.
  • Stir in the tomato paste as you fold the meat and veggies together. Continue to cook another minute before pouring in the diced cherry tomatoes. Rinse the can out with 1 cup water and add this to the skillet as well. Once the liquids come to a boil, add the broken spaghetti, Italian seasoning, and 1/2 tsp. sea salt. reduce heat, cover, and simmer until pasta is tender. (About 15 - 20).​
  • Remove from heat and stir in the mozzarella, grana padano, fresh parsley, and fresh basil. Taste and adjust salt if desired.
  • Serve garnished with additional grana padano and fresh parsley. ENJOY!
