Chickpea Quinoa Salad

If you're looking for a salad that's fresh and light, full of protein and vitamins, and delicious, look no further! My Chickpea Quinoa salad is everything and then some.

As the name suggests, the salad is full of chickpeas and fluffy quinoa which is where you'll get your protein fix from. Along with chickpeas and quinoa, you'll find fresh cucumbers, peppers, onions, and fresh herbs, tossed in a light vinaigrette. 

It takes 15 minutes to put together and will hold up in the fridge for 5 days easily which is perfect for the weekdays at work. 

**Always cook extras of your grains / legumes when you cook them and store them away for future use. Having quinoa on hand is perfect when you're throwing together a salad much like this one. If you don't have the quinoa handy, expect 15 minutes or so of cook time added to the recipe!

CHICKPEA QUINOA SALAD

Full of protein and fresh flavours, this chickpea quinoa salad recipe is one to keep on hand. 
Chickpeas and quinoa along with cukes, peppers, and onions, are tossed in a light vinaigrette with parsley for a refreshingly light salad that's as nutritious as it is tasty!
Remember! Whenever you cook lentils, quinoa, beans etc., cook extras and keep them on hand for recipes like this. It'll save you cook time on future recipes.

CAULIFLOWER TIKKA MASALA

This recipe is probably in my top 5 as far as flavour goes, it was exceptional and so flavourful.
I marinated the cauliflower in yogurt and spices prior to cooking it which made it extra tender and delicious. It is then added to a creamy, coconutty tomato sauce, full of robust spices and flavours, where it simmers away until perfectly cooked.
Served over rice with a sprinkling of fresh cilantro and lime, it's a dish that warms you up from the inside out with every delicious bite. 

Interesting Fact - Tikka Masala is not a traditional Indian dish! It was created by Indian immigrants in the U.K.

Tex Mex Potato Salad

As summer approaches, the more potato salad recipes you have in your arsenal, the better. Traditional, creamy potato salad is just delicious and so familiar, but this time around, I've got something a little different for you guys.

Think salsa inspiration here. We've got fresh veggies including peppers, jalapeno, and onions, along with corn, black beans, and herbage, tossed together with our perfectly cooked potatoes in a flavourful chili lime vinaigrette. The vinaigrette is super tasty and really brings all of the flavours of the salad together.

Rainbow Pasta

I always tell you guys to shop around when it comes to your everyday products. I say this because you can score some pretty special products by straying from the beaten path, in other words, checking out specialty / novelty shops will often surprise you with products you can't find at the supermarket. 

I was lucky enough to pop in to an Italian import shop where they had so many different kinds of dry pasta that I had never seen before including these colourful Fazzoletti noodles. Flat, square shaped pasta that was coloured with turmeric, beet, and spinach. They sure are gorgeous when you're making an oil based sauce that will allow you to see their beautiful colours. 

For this recipe, I've got a delicious oil and herb based dish with perfectly cooked cauliflower, zucchini, and fazzoletti noodles. The whole dish is ready in under 45 minutes and tastes fabulous for being so simple. The fragrant herbs used include fresh basil, sage, thyme, and parsley, which permeate the dish and make every bite fragrant and delicious.

TEX MEX POTATO SALAD
with a Chili Lime Vinaigrette


Creamy potato salad is something we've all had and loved, but sometimes I like to enjoy a fresher take on this classic summertime staple.
This recipe brings the fiesta flavours with a black bean pico, tender cooked potatoes, and a simple and fresh chili lime vinaigrette.
The resulting salad is fresh, light, and delicious.

RAINBOW PASTA

Inspired by the beautiful noodles I used, this pasta dish gets its name from the beautiful colours of the pasta as well as the veggies included. 
Specialty shops are fun because you can find all sorts of imported products that are unique like these 5 colour noodles I scored. Don't worry, any pasta will do for this recipe!
Tender pasta, cauliflower, and zucchini, tossed in a delicious butter and fresh herb sauce for a light dish that just needs a salad to be the perfect meal!

Roasted Asparagus with Pesto & Toasty Topping

It took a long time for me to discover how much I enjoyed asparagus. It wasn't something I ate a lot of growing up and had only tried it here or there until a few years ago. Once I discovered how amazing it was when it was cooked just right, I realized I could legitimately eat it every day.

With that being said, perfectly roasted asparagus is a thing of wonder but it can get pretty boring if you don't doctor it up time and time again. Don't get me wrong, asparagus is delicious, but it's even more delicious with a few extra ingredients to amp up the tasty factor.

For this recipe, I've dressed the asparagus in pesto which always adds a robust flavour and finished them with a squeeze of lemon juice. For the topping, I toasted some seasoned bread crumbs with hemp hearts until they were fragrant and browned. The topping ends up being the perfect touch for the asparagus.

Vegetable Barley Soup

A hearty bowl of soup is just what a gloomy day calls for. It's been nothing but clouds and cold temperatures here in Windsor Ontario since Spring started so it's the perfect time to enjoy a delicious bowl of soup.

I love making soup because it's pretty foolproof. Any collection of veggies taste great and it's fun to play around with spice blends to create a bowl of soup that is exactly to your liking. There's really no way to go wrong, plus, it helps clean out the crisper in between grocery days.

Today's recipe is a soup that is full of fresh veggies including cauliflower, zucchini, and potatoes, along with one of my favourite soup ingredients, barley! I love barley in soup because it provides the perfect chew and texture amongst a bowl of tender veggies.

PESTO ROASTED ASPARAGUS with TOASTED BREAD CRUMBS & HEMP HEARTS

Roasted asparagus is such a beautiful thing especially when you've mastered the cook time for perfectly cooked asparagus every time. It's got to be one of my favourite sides!
This batch is tossed in pesto and lemon juice for a robust and fresh flavour and finished with a toasted hemp heart and bread crumb topping that adds the perfect saltiness and crunch.

VEGETABLE BARLEY SOUP

Quite simply, this is a soup that is loaded with fresh vegetables including cauliflower, zucchini, and peppers, along with tender barley, and a delicious combination of herbs and seasonings. 
This soup freezes well so you can enjoy it on a busy night when there's no time to whip something up!

Creamy Gnocchi Bake

I'm pretty obsessed with gnocchi. Not only is it delicious with a simple tomato sauce, but it's pretty fabulous in a creamy casserole as well!

Today's recipe is super rich and creamy and full of tender gnocchi and perfectly cooked veggies. We've got veggies including button mushrooms, thinly sliced brussel sprouts, fresh spinach, medley tomatoes, and artichokes, tossed together with tender gnocchi and baked under a layer of crumbs until bubbly, brown, and delicious.

Every bite is something new thanks to the plethora of veggies included with this casserole. The brussel sprouts provide a welcome bitterness, the artichokes add a hint of tang, and the tomatoes add a pop of freshness with every bite.
