Court Rules Against North Carolina's Ag-Gag Law

A court in North Carolina ruled against the state's ag-gag laws, siding with advocacy groups who claimed that the law actively undermined their first amendment rights. Ag-gag laws are designed to hide the truth from consumers rather than addressing abuse and atrocities committed. The law extended to nursing homes & daycares as well, suggesting that there were obvious short-comings in those industries as well.

Cheeseburger Sliders

You guys know how much I adore sliders. Cute, handheld, fun to make, they're adorable. My Cheeseburger Sliders give you that full size feeling in a miniature variety and they couldn't be easier to put together.

Instead of forming individual patties, we're just cooking our plant-based beef in a skillet, breaking it down in to crumbles. It's so much easier and requires less prep. Smothered in cheese, sliced red onions, and crispy dill pickles, and baked until golden brown and melty. They're so yummy and so easy to put together, why wouldn't you make them often?

British Columbia - Meadow Valley Meats Being Investigated For Animal Cruelty

One of BC's largest producers of meat is currently being investigated for animal cruelty after an undercover video documented several instances of cruelty / abuse outside of Canada's slaughterhouse / welfare guidelines. Animals were documented being kicked, punched, electrically prodded in their faces, and hit with random objects / paddles repeatedly.

Tomato Risotto

Risotto is one of those dishes that proves that minimal ingredients can create something so flavourful and delicious. My Tomato Risotto is the perfect example of a dish that only needs a few, quality ingredients to be absolutely fabulous.

It all starts with some garlic, pepper flakes, and a butter / EVOO combination, followed by shallots, toasted arborio rice, wine, and endless ladles of broth, until a dreamy, creamy risotto lies before us. I finished the risotto with fresh basil, plump grape tomatoes, saffron, and a healthy dose of grated pecorino. It's rich and creamy, flavourful, and super easy to whip up.

Creamy Pecorino & Pepper Ravioli

When I was writing this recipe, I had a cacio e pepe sort of thing going on in my head. Lots of pepper, hard cheese, and pasta water, saucy ravioli, simple. Then, I realized I had some open cream in the fridge that I needed to use up, and voila!

My Creamy Pecorino & Pepper Ravioli takes less than 30 minutes to make from start to fin. The sauce is simple but flavourful, with heavy pepper notes, richness from the cream, the right amount of hat, and nuttiness from the pecorino. As I said, it's so simple, requires only a few ingredients, and tastes absolutely delicious.

Tortellini White Bean Soup

The weather here in Windsor, Ontario, has really dipped in the last day or so which means it's the perfect weather for a big, comforting bowl of hot, delicious soup.

I've whipped up a tortellini white bean soup that's absolutely delicious, hearty, and full of plump, tender, tortellini pasta. Along with the tortellini, there's smooth and creamy white beans, juicy grape tomatoes, tender zucchini, and notes of nuttiness from a cheese rind, heat from pepperoncini, and pops of freshness from the lemon & herbs. African Leopards - More ESA Protections Required

African Leopards are already facing perils that include habitat loss, ceremonial use of pelts, the illegal wildlife trade, and fragmentation. Knowing this, trophy hunting is still permitted, which is directly working against conservation efforts. Now, the fight to increase ESA protections that would target trophy hunting is at the forefront. Leopards need these protections or it will be too late to help them.

Chili Mac & Cheese

Ready for a mid-week, Mac and Cheese pick me up? I sure am! As y'all know, I'm a sucker for a baked mac and I believe I've perfected my baked mac and cheese recipe. This time however, we're using some leftover chili to give our mac and cheese a little something extra.

I've made my egg-based mac, which includes vintage cheddar, monterey jack, gouda, and cream cheese, and simply dolloped some of my Impossible Chili throughout the mac. Baked until golden brown, bubbly, and fu<king glorious, that chili provides a some heat to cut through the richness of the mac and cheese. Chili and cheese go so well together so you can expect that this baked mac is a winner.

The Fight to Ban Hunting Trophies in the UK Continues

A bill aimed at banning the import of hunting trophies continues to make its way through Parliament despite pushback from Safari groups and gun lobbyists. Numbers don't lie, Africa's most recognized species are already facing perils including fragmentation, poaching, human conflicts, and habitat loss, and yet we continue to allow wealthy people to shoot and kill them for fun.

Cheesy Manicotti

What's the difference between cannelloni & manicotti you ask? Quite simply, it's the shape that differentiates them. Cannelloni are typically smooth noodles, while manicotti are ridged and a bit thicker than cannelloni. Outside of those minor differences, they're fairly interchangeable.

My Cheesy Manicotti is is literal stuffed pasta perfection. I love manicotti because they have so much texture even after being baked. They remain hearty and their ridges collect all of that beautiful baked sauce perfectly. I made my usual blended tomato sauce and baked these beauts under a layer of mozz.
