2 New Recipes Up :)

I enjoyed these together for the simple fact that Enchiladas can be a little texturally off. I enjoy a bit of crunch with everything so it was important for me to find a good side dish compatible with strong, Mexican inspired flavours.

Both recipes are posted and I hope you all enjoy them!

Cream of Celery Soup

Cream Soups are wonderfully simple and are rich and delicious. Cream of Celery soup is a good base soup for a variety of other soups and dishes.

Also, you can swap out the celery in place of other vegetables and have yourself an entirely different cream soup using the same base recipe.

Try Cream of Broccoli, Cream of Cauliflower, or even my childhood favourite, Cream of Mushroom.

I absolutely LOVE black beans. I use them as often as possible and enjoy them prepared any imaginable way. This week I will be taking the black bean and using it in 2 different ways.

These were definitely a hit :D Inspired by my mothers rollups, these rollups have a very vegetarian twist. Spinach, Ricotta, and fresh herbs form the perfect filling for these rollups.

Dredged in a delicious, roasted sauce and VOILA, meal time !

I recently had the pleasure of being treated to dinner by my oldest friend in celebration of my birthday. As soon as I read the recipe I was intrigued, what a unique combination of flavours.

The slaw was the star in my opinion! So simple to make and quite possibly the best pairing to every single Mexican dish you can imagine! Zingy lime and crispy cabbage pair well with subtle notes of cilantro. No salt or pepper were even needed !
GOING TO BE PUTTING MY OWN TWIST ON THIS ONE SOON BTW!

Roasted cauliflower and jalapeno dredged in monterey jack cheese and baked between two tortillas. I couldn't stop eating and it was the roasted cauliflower that really got me. What a perfect and unusual flavour contribution to your typical Quesadilla!
