Here's what's coming up next week!

I've got 3 great recipes for y'all next week. As I mentioned yesterday, Tomato Week is postponed until I have a bit more time to write and play around with recipes. In lieu of this, I've got a great lineup!

  • First up for the week will be my Stuffed Romas. Gorgeous tomatoes stuffed with a cheesy, white bean puree and baked. The tomatoes are bursting with flavour and the creamy puree is so divine. I love white beans and they are the perfect stuffing for these tomatoes. The dish is finished off with some olive oil toasted bread crumbs for flavour AND texture. It's delicious.


  • My second recipe for the week is inspired by a dish I was lucky enough to try at a friends house. Frozen hash browns are the star of this dish with a little help from peppers, onions, and cheese. My Cheesy Jalapeno Hashbrown Casserole has tons of flavour and is super simple to whip up.


  • Finishing off the week will be my Spinach, Artichoke, & Red Pepper Tortiglioni. Creamy, cheesy sauce with fresh spinach, peppers, and artichokes all cooked together and tossed with Tortiglioni pasta. The dish is finished by baking up under some more cheese for a scrumptious pasta bake. It's a main course play on spinach and artichoke dip you won't want to miss!

Spicy Tomatillo Salsa Soup

Tomatillo Salsa is one of my favourite condiments. It's tangy, fresh tasting, and packs some heat. It's also the perfect base for a spicy soup!

My Tomatillo Salsa soup is gorgeous, a little spicy, and so tasty. Fresh veggies add the crunch to this soup with the Tomatillo salsa taking center stage flavour wise. Every bite packs a wallop of flavour you're sure to love!

Fiesta Beans

Beans are so versatile, they click with so many different flavours and ingredients. That's why I knew I'd be whipping up some fancy, fiesta style beans for FIESTA WEEK.

These beans are so delicious and a great source of protein! I've added some other fresh vegetables to amp the beans up and provide some additional colour as well. They are smoky, rich, and just a tad spicy thanks to the addition of Mexican Hot Sauce.

Mexican hot sauce is great because it focuses more on flavour with spice being in the background as opposed to tongue burning heat. It adds a layer of flavour and pairs so well with the smokiness of the Worcestershire sauce for a delicious bite every time.

Lime & Cilantro Guacamole stuffed Potato Skins

My first FIESTA themed dish is ready for y'all. I am a huge fan of potato skins, I think they are the the best appetizer to lay out because few people dislike potatoes. I also particularly love potato skins when they are stuffed with something oh so creamy.

My Lime and Cilantro Guacamole stuffed Potato Skins are so delicious! They offer the perfect contrast of crunchy and smooth in every bite. Smooth, creamy Guacamole, crispy red potato skins, and melty cheese make one super delicious appetizer everyone will be huddling around the table for.

It's Fiesta Week next week!

Who doesn't love the idea of a fiEsta? Lots of colours, lots of flavours, and lots of fun! My Fiesta menu is all of those things and more with fresh, flavourful ingredients and colourful, delicious dishes. Here's the menu for next week's Fiesta!

  • Starting things off will be my Lime & Cilantro Guacamole stuffed Potato Skins. The contrast of crispy skins and creamy guacamole is so perfect. The secret is baking the skins 3 times getting them nice and crispy. All of this paradise is buried underneath slices of Monterey Jack & Cheddar cheeses for the ultimate party pleasing appetizer!


  • My Fiesta Beans are a barbecues best friend. They're smoky, just a little spicy, and so flavourful. The key to these feisty beans is the Mexican hot sauce. It adds a touch of smokiness and subtle heat that really plays up the smokiness of the Worcestershire sauce. Honestly, these beans are my new favourite way to enjoy beans and I eat them often!


  • Finishing up the week will be my Spicy Tomatillo Salsa Soup. Tomatillo Salsa is delicious and it is already made up of a lot of great ingredients including jalapeno, cilantro, and onions. Adding some gorgeous, fresh vegetables and some low sodium stock and voila, a spicy and flavourful soup.
