Tzatziki + Air Fried Zuccs

Tzatziki is like, one of the most perfect dips in my opinion. It's light and airy, full of freshness from cucumbers, lemon, and herbs, and pairs so well with just about anything.

It works as a cooling agent when paired along with something spicy. It's great to dip your pita slices, naan dippers, or veggies in to for a light, fresh pop. I also love that it has so much texture from the cucumbers which add the perfect little crunch.

Slow Cooker Cabbage Soup

We've got nothing but rain for the next few days, so a nice, comforting bowl of soup is just what this weekend is going to need. We're nearing the end of soup season here y'all so let's tuck in to a few more bowls before the warm weather hits.

My slow cooker cab soup couldn't be easier. Everything is tossed in to the slow cooker altogether making it super easy to put together. Then, it's as simple as setting and coming back to it in 8ish hours once that cabbage is nice and tender.

Loaded Taco Brown Rice Bowls

OK guys, this is weeknight eats at its finest if you ask me. Flavourful, hearty, and super easy to throw together, that's what we like for busy weeknights.

We have a seasoned Beyond Meat crumble featuring chipotle & Tex-Mex seasonings, creamy black beans, and a Mexican Street Corn salad mix from President's Choice. Then, you just need whatever garnishes you have on hand, a quick drizzle of store-bought cilantro lime sauce, and 4 hungry bellies to devour these delicious bowls.

Crockpot Chili

Lately, Sundays have been my only day to get caught up on the week's worth of tasks. Tending to the plants, cleaning up, organizing, laundry, etc., I'm often stretched quite thin. That's exactly why this crockpot chili is the answer to a busy Sunday!

Your crockpot is your friend when you're knee deep in tasks. All it takes is a quick cook on some spices, veg, and plant-based beef, and then throwing everything together in to the crockpot. After 8 hours and endless tasks completed, you have a flavourful, rich chili ready to go. Serve it up over rice, taters, or your favourite grain and dinner is served.

Keep some for burritos, chili eggs, chili cheese fries etc., it can be reused for another meal / snack!

Despite Liberal Campaign promises, Horses Are Still being Shipped Overseas for Slaughter

The Liberal party of Canada made banning live horse exports part of their campaign, and despite being in Government now for almost 10 years, we're still shipping thousands of horses every year to japan to be slaughtered for meat. It's time for the Liberal Government to hold true to their promises and end cruel, live export of horses.

Wet Burritos

Ok y'all, ready to undo the buttons on your pants and feel that happy, food coma vibe? My gigantic wet burritos have entered the chat and I'm telling you, they're as delicious as they are large and in charge.

Stuffed with a combination of Old El Paso Mexican rice & brown rice, black beans, a seasoned Beyond Meat mix, salsa, cheese, and freshly prepared guac, rolled, baked, and smothered in red enchilada sauce and additional cheese until sloppy and glorious.

Illegal Ivory Sold in Over 20 Stores Across Florida

An undercover investigation found that 20 different stores throughout Florida were selling illegal ivory despite a nationwide ban on the import of new ivory. This signals a thriving ivory market and a continued decimation of elephants. Florida must do more to protect elephants and crack down on illegal imports / retail of ivory products.

I've loved Mexican food for a long time. Going to eat at Mexican restaurants has always been one of my favourite things to do. Wherever I've been in the world, if there was a Mexican restaurant to try, I was there. That love came home to my kitchen with me as time has gone on at this little blog, I've written quite a few Mexican inspired recipes.

Stovetop Potato Leek Fondants

When my oven died, I was convinced I'd never eat a smooth, velvety fondant potato ever again. I decided to write a recipe for a stove top version for those of us who are suddenly without an oven, or just don't want to run it.

The method is similar. Fry your potatoes until golden and crispy, cook down some leeks & garlic, return the taters to the skillet with butter, broth, and wine, and cover until ridiculously smooth and tender.

I finished them with a little gruyere, grana padano, and fresh parsley, If you've tried my other fondant potato recipes, you should know that this one is absolutely delicious. Head to the RECIPES page.

Mini Beef & Bean Enchiladas

Enchiladas are a weeknight go to for me because they're easy to put together, rely on a combination of fresh & pantry items, and bake in under a half an hour. Not to mention, they're absolutely delicious.

Stuffed with a combination of seasoned beyond meat crumble, and creamy refried beans, and baked in enchilada sauce under a blanket of melty monterey jack cheese. It's up to you to garnish to your heart's content here. Pickled onions, crumbled feta, fresh green onions / cilantro, Tajin, the possibilities are endless. Just use whatever you have handy!
