Corn Fritters

I love fresh corn every which way you can prepare it. Roasted, barbecued, grilled, boiled, literally, every which way imaginable. I love it with butter and salt, seasonings, dolled up like Mexican street corn, I've never met a cob I didn't like. I also know that sometimes we are busy and those cobs might sit in the fridge longer than we'd like to admit, that's where these delicious and simple corn fritters come in!

My corn fritter recipe is so simple and a great way to use up a cob or two that might not make it otherwise. Plus, these tasty little fritters are a great snack, great for sharing or serving at get togethers. Chana Masala

 I still remember the first time I tried chana masala, it was like an explosion of flavour in my mouth that I had never experienced. Indian food is reputably some of the most fragrant and recognizable cuisines out there. Full of spices like coriander, cardamom, clove, and cumin, there's no denying the intense fragrance of the cuisine.

I've whipped up my own chana masala for you guys and I think you will experience what I first experienced with it. Basically, chana masala is a tomato like stew full of spices and chickpeas which you can have mild to spicy depending on your taste. My version plays off of the traditional idea but still delivers a punch of exotic flavour. Trust me, you'll be hard pressed not to head back for seconds.

White Bean & Fresh Corn Stew

There's nothing a big, hearty bowl of stew can't fix. When the temps start to drop, my brain immediately starts going to comforting foods that warm you up from the inside out which is where this delish stew comes in.

Stew is kind of foolproof because anything and everything can pretty much go into it and it will still be delicious. In fact, the more you add, the heartier and more satisfying it ends up being!

Today's stew makes use of fresh cob sweet corn which is in season and at its peak. Along with fresh corn, we've got hearty white beans, russet and sweet potato chunks, carrot slices, and celery, swimming in a thick and flavourful stew broth. 

Once again, I avoided the corn starch method to thicken by removing and blending a cup of the stew. The potatoes and beans are starchy and end up creating a thick puree that thickens up the stew, no flour or corn starch required.

ESH CORN STEW


The weather is cooling down which means stews, soups, and baked goodies are going to start coming back into the kitchen. There's nothing better than cozying up to a steamy bowl of stew on a chilly afternoon and I've got a super delicious stew for you to cozy up to!

Featuring fresh corn which is at its peak right now, white beans, sweet potato, and russets, this is a hearty and filling stew that leaves you feeling cozy and satisfied with every delicious bite.
CHANA MASALA

This has to be one of my favourite dishes to order when I order out Indian food. I must admit, every place that I've enjoyed it, it's been unique to the last place I tried, which implies to me that everyone has their own interpretation of what chana masala is all about. This also means, I can slide in with my own version for y'all to try!

Chana Masala is a dish of chickpeas cooked down in a robustly seasoned tomato sauce. The sauce is typically served over rice or can be enjoyed as a stand alone dish. Full of flavours from contributing spices such as cumin, chili, coriander, cardamom, clove, and nutmeg, this chana permeates the air and invokes hunger in a way other dishes can't. There's something about the smell of Indian food that always gets my stomach going and my chana masala is no different! Ready your noses and stomachs people, chana masala is on the menu!

Coconut Curry Gnocchi

Straying from the traditional ideas or methods of enjoying a dish can provide you with something like this! Something that's different but delicious, new, and unique, and there's absolutely nothing wrong with that.

Gnocchi is one of my favourite things to eat with a scratch made tomato sauce, some melty cheese, and even some toasty bread crumbs. Wanting to try something different, I whipped up a vegan coconut curry sauce. Rich, fragrant, and ridiculously creamy, the gnocchi seem right at home swimming in this gorgeous orange sauce.

Along with gnocchi, there's tender pieces of cauliflower and a cilantro style chutney that adds a pop of colour and some welcome herbaceousness. It's a delicious dish I just know y'all are going to love! Head to the RECIPES page!

White Corn Hominy & Cheddar Taco Bowls

Hominy is my new favourite ingredient in the kitchen. I love how dense and texturally enjoyable it is, it acts as the perfect meat substitute in dishes like this one! 

I'm also super obsessed with the Old El Paso mini taco bowls. They're literally the perfect size and were the perfect vessel for my hominy filling. White corn hominy, cheddar, veggies, and spices, sauteed and stuffed inside taco bowls along with chipotle refried beans, guacamole, chopped red cabbage, and diced tomatoes.

CREAMY COCONUT CURRY GNOCCHI

I was craving curry and gnocchi at the same time, so naturally, I had to find a way to make that happen. That's where the inspiration for this recipe came from, cravings lol Cravings can be so strange and seem so mismatched, until you put them together and create something magical!

Tender gnocchi and cauliflower tossed in  a delightfully rich and creamy coconut curry sauce. The sauce is full of robust spices that permeate the air as the sauce bubbles away, igniting hunger in even the most stubborn of people.  Trust me when I say, this is one dish that you'll be adding to your recipe collection for sure!

WHITE CORN HOMINY & CHEDDAR TACO BOWLS

Old El Paso mini taco bowls are the perfect size because they can easily be made into light snacks, or hearty, main course meals. I absolutely love how easy they are to utilize!
Chipotle refried beans, white corn hominy and cheddar taco filling, fresh guacamole, and crunchy cabbage and tomatoes, come together for one delightfully balanced, delicious taco bowl. 
Its always a good day when tacos are involved!
