If there's one thing I've learned since I arrived in Dublin, it's that they love sweet corn. It's in everything from tuna and egg salads to condiments on sandwiches or subs. It's super popular here and for good reason, sweet corn is delicious!

Living in the hostel means that I don't have access to a lot of my old kitchen gadgets that made my life so much easier (blender, food processor etc.) so I have to whip up dishes that are easy to make and quick too! That's why this potato salad is right on the money as far as those restrictions go.

Tender mini yellow potatoes, protein packed hard boiled free range eggs, fresh sweet corn, and fresh dill tossed together in an oil and mayonnaise based dressing. Simple, economical, and delicious!

Ultimate, or special occasions Sammie is what I like to call this. It's not an every day thing, but you'll know when the morning calls for something glorious like this. 2 perfectly fried eggs with just the right amount of yolky action, crispy hash brown patty smothered in melty cheddar, cream cheese, fresh spinach, tomatoes, and red onions. It's heavenly and the perfect way to start a day that might seem otherwise hopeless.
