Ann Arbor, Michigan has announced a ban on the sale of fur with a one year phase out & exemption program for pelts in use. This victory is especially important as Michigan is the 6th largest fur producer in the country. Learn more under the ANIMAL NEWS tab.

Loaded Brunch Jacket Potatoes

What's For Brunch?

Alright y'all, let's get our brunch on! This is one of my absolute favs in the loaded baked potato theme I've had going on. It's inspired by my love for the vegetarian Irish breakfast I enjoyed during my stint in Dublin. Those breakfasts were fantastic and reignited my love for baked beans at any time of the day.

We've got a perfectly cooked russet potato that's fluffy on the inside with the crispiest skin. We're stuffing it with the oldest white cheddar and smothering it in baked beans. Some sautéed cremini mushies, diced red uns, sour cream, and a perfectly runny fried egg nestled on top.

Ag-Gag laws are designed to shield the factory farming industry from being exposed for negligence & needless cruelty, and deny consumers the right to know how their "food" is being produced. Baked Bean Jacket Potato

Here we are folks, loaded baked potato #3. This is actually one of my faves because for me, it's the loaded potato that started it all. I should start by reminding y'all of my obsession with baked beans. Idc if they're from a can, a pouch, or a baking dish that's baked for hours, I simply love them any way. They also happen to be the perfect addition to a loaded baked potato!

We've got extra old cheddar, baked beans, a little butter, sour cream, chipotle crema, and some green uns. The beans and cheddar get to luscious and savoury and then that pop of freshness from the green uns and cool down effect from the sour cream...ugh, I could eat this one every day <3

Poutine Baked Potato

Ditch The Fries

Poutine is like, the Canadian thang. Every restaurant everywhere offers up their take on a poutine. Poutines are probably in my top 3 things I like to cheat on relatively healthy eating with. They're just, divine in all of their unhealthy glory.

Now, take that love for poutine and ditch the fries for a fluffy baked potato. Think about it, crispy potato skin, fluffy potato, melty curds, silky gravy...you into it yet? Just trust me on this one, anything a crispy batch of fries can do...a baked potato can also do.

Massive Arctic Oil & Gas Project Blocked By Federal Court

A massive oil drilling project initially approved by the Trump administration was blocked by an Alaskan Federal Court for failing to properly examine the environmental effects / effects on endangered polar bears. Mexican Loaded Jacket Potato

Here's to a week of delicious jacket potato recipes! First up, my Mexican inspired recipe has tender pinto beans, melty old cheddar, my fave esquites salad, some saucy action, and some pickled onions. It's a delicious combination of Mexican inspired ingredients that really bring this basic russet to the next level.

Make sure you buy a Mexican brand of Pinto Beans because they're going to contain spices and typically some onions / peppers that enhance their flavour. Regular canned beans won't have all of those additions. I also linked my recipe for Esquites salad so that you can prepare it in advance of these gorg jacket potatoes.

I've been on a bit of a loaded baked potato binge lately and I can't wait to share all of the jacket potatoes I've whipped up in the past couple of weeks. Next week, I'll have 5 new recipes for jacket potatoes that you guys are going to die for. There's nothing better than an entire meal stuffed inside of an enormous russet potato.
