Tomato Feta Salad

​It's often said, the simplest things can be the very best, and I tend to believe that. Such is the case with this delicious, fresh, and super simple tomato feta salad.

Fresh grape and zima tomatoes, salty, creamy feta cheese, and onions, tossed in EVOO and lemon juice. It doesn't get any easier than that!

Chopped Cabbage Salad

Looking to quell a cabbage fix without eating coleslaw? I'm not knocking coleslaw of course, but sometimes it's nice to enjoy cabbage in another salad variety like this one.

Fresh tomatoes, cucumbers, peppers, and cabbage, tossed together with red wine vinegar and lemon juice for a crispy crunchy, fresh, and delicious cabbage salad. It's a cinch to put together and satisfies that cabbage craving to boot!

Please note, red cabbage is notorious for bleeding, especially when dressed with ingredients that are acidic. This salad is made in a smaller batch to enjoy it faster and avoid the bleeding. Make sure to enjoy the salad within the first two days before the bleeding gets bad and the salad doesn't look as pretty any longer.

CHOPPED CABBAGE SALAD

I recently shared a post about red cabbage being quite the little superfood so naturally, I must share a red cabbage recipe. Cabbage is so much more than just the star of coleslaw, it's great in so many different salads.
I've got a chopped salad for you guys full of fresh red cabbage along with cukes, grape tomatoes, and peppers. Dressed in a simple red wine and lemon vinaigrette, this salad is fresh, crisp, and nutritious.

TOMATO FETA SALAD

Tomatoes and feta go together like milk and cereal, they're the perfect partners in crime. The freshness of the tomatoes cuts through the salty richness of the feta creating the perfect bite. 
I've got a quick tomato feta salad dressed in a simple lemon vinaigrette for you guys along with an avolicious way to enjoy this delicious salad.

White Corn Hominy & Navy Bean Tacos

There's no such thing as Taco Tuesday in my house, it's taco any day! My obsession with tacos is legit and I must have them as often as humanly possible or I believe I'd go crazy. So that's why these delicious tacos made their way into my life!

White corn hominy and navy beans come together with jalapeno, onion, pepper, ranchera sauce, and monterey jack cheese, for a savoury, mildly spicy taco filling full of flavour and textures. The tacos are finished with fresh romaine and red cabbage for crunch, more ranchera sauce, and a dollop of sour cream.

Summer Vegetable Tian

Vegetable Tians are such a beautiful dish. They're an opportunity to wow people with their beauty and an opportunity for you to show off a little. I've always said, the dish looks like it takes days to put together when in fact, it's actually quite simple!

This time, I've used Japanese eggplant, along with yellow and green zucchini in alternating slices to create this beautiful Tian. Seasoned simply with salt, pepper flakes, and dried thyme, and roasted until veggies are tender and fully cooked. 

Finished with a toasty garlic and breadcrumb mixture that provides a much needed crunch. Such a delightful dish that focuses on making veggies the star and focus. Absolutely delicious!

Here's a tip for building your Tian!

When starting to assemble, use the end of one of your veggies as a starting point. This will help to keep your slices upright and tight as you build around. When you get back to the start, remove the end pieces and fill in with more slices.

You can repeat using this method for the inside layer as well!

SUMMER VEGETABLE TIAN with TOASTY GARLIC BREADCRUMBS

Isn't she marvelous? I just love the way vegetables are the star in this seemingly difficult to prepare dish. Jokes on everyone you serve this to because it's actually a cinch to whip up if you have a mandolin handy!
Eggplant, along with yellow and green zucchini, thinly sliced, arranged, and baked until tender. Finished with toasted garlic and breadcrumbs for the perfect crunch, this is one dish you / guests will want seconds of.
WHITE CORN HOMINY & NAVY BEAN TACOS

It wouldn't be a normal week at my house unless I enjoyed some kind of taco. I mean, name something that's actually better than a taco?

The tacos are filled with a white corn hominy and navy bean mixture containing jalapeno, pepper, and onions, held together by a glorious amount of spicy monterey jack cheese. It's the perfect savoury filling complimented by crunchy cabbage and romaine, for what I'm going to call, a perfect taco.

Roasted Cauli Tacos with Pico and Cabbage

It wouldn't be a regular week in my house if I didn't make tacos at least once. I mean c'mon, tacos guys! They're just the best thing ever!

This week's taco is full of deliciousness starting with seasoned and roasted cauliflower. Seasoned with mexican inspired spices and panko crumbs for crunch, it's then roasted until tender and perfect. 

Along with roasted cauli, there's cabbage for crunch, pico for freshness, and refried beans for that perfect balance of savoury, fresh, and crunch. It's a perfect combination!

ROASTED CAULI TACOS WITH PICO & CABBAGE

If I didn't eat tacos at least once a week, I'd be concerned with myself. Tacos are pretty much my obsession right now. I mean, what's better than tacos guys?
For this week's taco, we've got roasted cauliflower tossed in panko and spices, refried beans, crunchy cabbage, and fresh pico. Everything works together so perfectly providing the perfect balance of flavour, crunch, and freshness. You guys will love these!

SHEET PAN ROASTED VEG WITH EGGS

I'm always a fan of a dish that doesn't require me to dirty a hundred dishes in the process. That's why sheet pan meals are so wonderful. Everything comes together on one sheet pan minimizing the amount of clean up!
Potato, Sweet Potato, Bell Pepper, and Cauliflower, tossed in spices and roasted until tender and delicious along with organic, free range eggs that cook up in a jiffy in the oven. Such an easy meal with some seriously delicious components.
