CHEESY JALAPENO CORN DIP

Corn and cheese are a match made in heaven if you ask me. Toss in some jalapenos and we're having a party!
I recently visited with one of my very best friends and we concocted this sinfully delicious corn dip that I think you guys are going to enjoy! 
Creamy cheese starts things off with a little help from peppers, jalapenos, corn, and shredded monterey & cheddar. Everything is baked up in the oven until bubbly and delicious and served with your favourite dipping chip!
I recommend enjoying the dip with a few fresh sides to tone down the richness like guacamole or a fresh pico.
ROASTED VEG LASAGNE with ROASTED RED PEPPER SAUCE

Lasagne is one of the most beautiful dishes to present, igniting hunger in everyone who spots it. Lasagne also happens to be a labour of love, it can be tremendously time consuming despite being worth its work in deliciousness.
Using OLIVIERI fresh pasta sheets makes things that much easier! I've roasted some gorgeous vegetables and prepared a delicious roasted red pepper tomato sauce to smother the lasagne in. We've got layers of ricotta, mozzarella, roasted veggies, and our delicious sauce, baked up and finished with a dusting of grated parm and fresh parsley.
Utterly delicious!

I've been so busy the past few weeks that filming a new video was the furthest thing from my mind. Now that I'm winding into the final two weeks before I leave, I find myself with spare time that I have decided to devote to filming the 6th episode of my animal news recap!

​1. Reported decline of nearly half of all of Canada's wildlife

A report from the World Wildlife Foundation suggests that Canada has lost almost 50% of its wildlife. Mammals are down 43% and some bird species have seen a whopping 70% reduction which is extremely alarming. Habitat loss, unsustainable harvests, and climate change, are all reported to be probable causes for these reductions.
This is extremely alarming considering reports I've shared about the world headed into its sixth mass extinction. With reports like this, is there anything that can be done to prevent hundreds of species from extinction?

2. ESA Act under attack from U.S congress

The Endangered Species Act was established in 1973 to protect endangered species from going extinct. Since its inception, it has prevented the extinction of a whopping 99% of species listed. Those numbers are phenomenal yet the United States government is attacking the ESA. With Trump's obvious lack of care towards the environment and animals and reports of us headed into the 6th mass extinction, is this news surprising?

3. The Vegetarian / Vegan Divide

This is something that I've unfortunately taken note of over my 16 years as a (proud) Vegetarian. There is a very big divide between Vegetarians and Vegans despite all of us fighting for the same thing in our own way. Who's causing this and why all the fuss? Let's dive into this and explore the many reasons this divide is evident and some tips on how to handle aggression regarding your lifestyle choice!

Yellow Split Pea Soup

Split pea soup is one of the easiest soups to make as the peas themselves cook rather quickly compared to other dried legumes. This soup also has very few ingredients and steps making it perfect for the busy weekdays.

Split peas basically lose all of their colour once they're cooked so if you only have green or red split peas, they'll work perfectly in this soup. They also cook down to a mushy consistency giving the soup a thick and delicious richness. Despite this, I always remove and blend some of the soup returning it back to the pot to intensify some flavours and add extra creaminess to the soup.

This soup is comforting, simple to make, and great for freezing. Make a big batch and save some for a rainy day!

Spicy Tomato Fettuccine

Fettuccine is great because it's so versatile. It tastes great with a thick and creamy sauce while also being perfect for a spicy pan sauce like this one!

Today's recipe is a spicy tomato fettuccine. Creating a chili infused oil to cook with is so simple and a great way to add extra flavour and oomph to your dish. It's as simple as heating up your EVOO with pepper flakes. Once the oil starts to heat, the flakes will start to pop and release their flavour into the oil. This creates a spicy, chili infused oil that you can utilize for this recipe.

Armed with your chili oil, you can now saute the rest of your veggies and flavours building layers as you go. 
--BUILDING LAYERS--

What do I mean when I say building layers of flavour? It's especially important when creating a recipe like this one that has so few ingredients. Layering flavours is a way of creating more depth of flavour in the dish.
To do this, you simply add your ingredients in succession. Starting off by toasting your pepper flakes is the first layer. Follow up with your garlic and let those flavours release, then add your onion etc. By adding your ingredients one by one, you're building flavours in the pan that will help create a super flavourful pan sauce that will dress your fettuccine beautifully. 

Keep this in mind when you're building a dish that has few ingredients. Letting each and every ingredient shine is the way to make something extra delicious without having much to add.

YELLOW SPLIT PEA SOUP

Split pea soup is one of the easiest and most delicious soups to make. There's hardly anything to it and it's so delicious.
Split peas cook in no time and the soup is as simple as sauteing your mirepoix, cooking your split peas in vegetable stock, and seasoning to taste. The resulting soup is flavourful, hearty, and easy peasy. The soup refrigerates and freezes well so make a big old batch and save some for a rainy day!

SPICY TOMATO BASIL FETTUCCINE

Spicy flavours and tomato are one of my favourite flavour combinations. Tomatoes are the perfect companion to a dish with a little heat and creating a wonderfully spiced chili oil is super simple.
To get that perfect heat level, toast your chili flakes in EVOO for a couple minutes prior to adding your onions and everything else. The few minutes in hot oil releases just enough of the flakes heat to create a sinfully delicious base for our fettuccine.
