Cinci Chili Dogs

Chili dogs were always a favourite at our house growing up because like, c'mon, what's not to love? My mom's chili was always delicious, but I'm using my Cincinnati Chili recipe for these dogs and serving them up 4 ways which means dog, chili, cheddar, onion.

Cincinnati chili is unique to the state and unique all the way around, with strong notes of cinnamon and rich, intense flavour from simmering for over an hour. It's so delicious and gets nice and thick, perfect for chili dogs like these.

Potato Bruschetta

When spring / summer roll around, it's all about bruschetta as far as I'm concerned. It's the perfect appetizer for warmer weather because it's light and fresh and super easy to put together.

Traditionally, you'd see bruschetta served on crispy bread which I love, but why not top some crispy, oven roasted potatoes instead? I baked thinly sliced potatoes coated in spicy pepperoncini and other seasonings until nice and crispy and finished them with grana padano. Then, it's as simple as topping a couple slices with some bruschetta, a drizzle of balsamic reduction, more grana padano of course, and some finishing herbage.

The potatoes are pretty addictive right off the tray so be forewarned, you need 14 slices lol any additional slices can be for snacking! Head to the RECIPES page.

Jalapeno Cheddar Biscuit Breakfast Sammies

Freshly baked biscuits are the only way you should be eating your breakfast sandwiches from this point forward. Crispy on the outside while gloriously fluffy and delicious on the inside; they're absolutely perfect for breakfast sams.

It starts with a batch of jalapeno cheddar biscuits which are nice & savoury with just a touch of heat. Then, it's as simple as frying up some plant-based eggs & sausages, grabbing some condiments, and assembling these beauties.

Lemon & Herb 5 Grain Soup

Simple, nutritious, hearty; that's this soup's tagline if it had one. I'm serving up a lemony, herby, 5 grain soup featuring a blend of wheat berries, oats, brown rice, spelt, and barley. These glorious grains are simmered in a brothy soup until plump and tender and finished with nutty grana padano, fresh basil & parsley, and lemon to round everything out.

I love this soup because it's so hearty while simultaneously feeling light and fresh because of the lemon & herb sitch. I prepared the soup on the thick side but you can easily thin it out with additional broth / water if desired.

Cacio E Pepe Style Tagliatelle with Garlic, Pepperoncini & Parsley

A couple years back, I wrote a recipe for Cacio E Pepe but the photograph I took was atrocious. I titled the recipe RETEST and had every intention of going back to it but here we are, two years later and I'm giving it another go with a little twist of course.

Traditional Cacio E Pepe features cracked pepper and pecorino emulsified with pasta cooking water until glossy, cheesy, and delicious. I love the recipe but I'm a sucker for spice, so I retested the recipe with a few, simple additions that give it a little something extra.

I decided to add some pepperoncini for heat, parsley for colour and freshness, and garlic for flavour of course. The dish is still super simple and relies only on the freshness of your ingredients to create a delicious pasta dish. Head to the RECIPES page.

US Dep. of Justice, Hunting Groups Appeal Gray Wolf Protections

The U.S. Department of Justice along with Safari Club International & the National Rifle Association have appealed a ruling that reinstated gray wolf protections through much of the lower 48 states.
