CREAMY SWEET POTATO SOUP

I'm not the biggest fan of the texture of sweet potatoes, but I absolutely love the flavour and nutrition of them.  There's no denying sweet potatoes are good for you so I like to enjoy them in soups like this one. 
This creamy sweet potato soup has a lovely heat from pepper flakes with notes of ginger and garlic in every bite. Finished with whipping cream to make it extra rich and delicious, this soup is everything you want and expect from a blended soup.

COCONUT PANEER MASALA

Anytime you hear the word masala, you can expect you'll be eating a dish full of robust flavours. This masala features paneer, a middle eastern cheese that is mild in flavour with a nice bite to it. Featuring coconut milk for richness, this masala boasts several spices including clove, cumin, and cinnamon, all of which lend to its inviting fragrance.
Served over brown rice (or any grain of choice), it's a hearty and flavourful dish that won't disappoint.

Extremism Comes in Many Forms

Reading this story, I was instantly angered because I have been on the receiving end of this sort of negativity in the past and it can have a really negative impact on you. But, before I dive into my own feelings, let me tell you the jist of the story.

Amy, a 17 year old girl from Michigan, Detroit, recently shared a recipe in a Vegan group online for tofurky that she was super fond of. She also happens not to be vegetarian or vegan. A member of the group contacted her privately to praise her recipe and began engaging with her in a pleasant manner. After discovering that she was not a vegan or vegetarian, the pleasantries ended. Ana explained that she simply disliked the texture and flavour of actual meat and preferred the tofu / soy versions instead. This is where things get nasty.

This individual then proceeds to sling accusations and engage Ana in a very entitled and self righteous way. Accusing her of appropriating the vegan culture for her own benefit, stealing food from the people who it is intended for, and threatening to have the group remove her. She changed tune so abruptly once she discovered that Ana simply disliked meat and that it was not for ethical reasons. While I appreciate her passion I suppose, you guys know that I'm about to tear her up right?

Let's start with the stealing food from vegans / vegetarians comment. As the article suggests, many Asian cultures have enjoyed tofu for ages, and many of them are not vegetarians or vegans. So to say that tofu was somehow created solely for veggies is ridiculous and completely untrue.

As far as appropriating a culture, that's also a ridiculous comment that was literally intended to be offensive. She's not pretending to vegan for any kind of reward, she simply shared a recipe for a vegan food, in a vegan group, that she enjoyed. How is that appropriating anything?

This person has become the opposite of the morals that they supposedly believe in. This person has become the opposite of empathetic, compassionate, and caring. Unfortunately, this is much more commonplace than one would hope.
This form of extremism is in my opinion, the reason that vegans have such a bad reputation. As I mentioned before, I've received comment from a vegan whom I believe has the right intentions, but the wrong approach. Attacking people, criticizing, insulting etc., these things work against the message you're sending. People reject opinions especially if they feel threatened or attacked, so how does this help?

Now, here's the kicker. A vegan or vegetarian or anyone who claims to care for animals, should do just that. They should care so much about animals that they recognize and celebrate ANY kind of change someone makes. Should someone decided to do Meat Free Mondays, celebrate the fact that they are leaving animals off of their plates one day a week. Someone stops wearing fur / leather, celebrate the fact that they are no longer contributing to the horrors of the industry. Someone who truly cares for animals should be jumping at the opportunity to celebrate any kind of victory. 

In this case, Ana has abandoned meat in favour of tofu. Whether they're doing it for ethical reasons or not, the fact is, they're leaving animals off of their plate. This is an opportunity to politely educate. Plant the seed of why you yourself are a vegetarian / vegan. This is an opportunity to make someone feel good about their choices. Any other kind of reaction is entirely against what a real animal lover would want.

Look, what this boils down to is we must celebrate every victory if it benefits animals. Going vegan or vegetarian should make you personally happy but it should never make you feel like you can be critical of someone else. It should never make you feel like you're better than anyone. If those are the feelings you're after, you don't really care about animals at all.

Cauliflower Veggie Casserole

Cauliflower is a pretty wonderous vegetable. Not only is it extremely good for you, but it's also very versatile in the kitchen. Cauliflower can be used in so many different applications like soups, salads, and chilis, but it also creates some pretty amazing sauces.

For this recipe, cauliflower is cooked down and blended into a smooth and creamy sauce that the rest of the casserole is then baked up in. Veggies like snap peas, green peas, potatoes, and broccoli, are baked up in a creamy cauli sauce and finished under a layer of buttery bread crumbs. 

Cracking through that crumb layer for service always gets my stomach growling. It's probably my favourite part of digging in!

Oil & Vinegar Potato Salad

If I had to choose a salad that I could eat every single day, it would most definitely be potato salad. There are so many varieties of potato salad out there but this has to be one of my favourites. I wrote this super simple recipe after trying my boss' potato salad at work. I couldn't believe that with such few ingredients, the salad was so delicious. It really inspired me to take things easy once and a while and enjoy the simpler things.

Oil & Vinegar Potato Salad

Inspired by my boss' delicious and super simple potato salad, this potato salad is as simple as 6 ingredients. I truly believe the simplicity of it is what makes it so special. Sometimes we tend to add and add thinking we need more when the most delicious things are the simplest.
Tender potatoes, thinly sliced onions, loads of fresh parsley, and a simple vinaigrette, are all this potato salad needs to be fabulous.

Creamy Cauliflower Veg Casserole 

Using cauliflower to make a creamy sauce is something I'm super fond of. It makes such a rich, creamy sauce full of cauliflower flavour that is perfect for so many dishes. This time around, it's the creamy base that all of my casserole veggies are baked up in. 
Veggies like potatoes, broccoli, snap peas, and corn, are baked up in a creamy cauliflower sauce until bubbly and delicious. Did I mention they are baked under a layer of crispy crumbs for added flavour and texture? I just love cracking through that bread crumb layer to reveal something so dreamy and creamy underneath. Such a delicious dish, you guys are going to love it!

1 Can of Chickpeas - 3 Ideas

It can be difficult to come up with ideas if you're having one of those uninspired cooking days. You know the ones, you look through the cupboards and fridge three or four times and still come up empty handed despite having things to eat. There's no worse feeling than being hungry and uninspired. But wait, do you have a can of chickpeas handy? 

If you have a can of chickpeas handy, then you have at least three delicious dishes that you can whip up!

  • ROAST THEM - Toss them in oil and your favourite spice blend and roast them up until they're nice and golden brown. They can be quite an addictive snack!

  • MAKE SANDWICHES - Have you tried chickpea tuna sandwiches? I'm still so addicted to this recipe two years after I wrote it! Mashing up the chickpeas with some mayo, black salt, and veggies like onion and celery really give you that tuna salad vibe without any fish having been harmed.
