Whenever you hear that something is stuffed, you should know it's going to be absolutely delicious! My 3 cheese stuffed zucchini is no exception to that rule. Stuffed with a collection of mozzarella, ricotta, and parmesan cheeses, the zucchini boats are then baked in a bed of marinara until the cheese has browned lightly on top and become extra delicious. I served the boats with some rotini I tossed in the remaining marinara sauce for a hearty side that perfectly compliments the zucchini.

I've been quite busy the past week and haven't had the opportunity to film but I've got my topics all ready to discuss.
This episode we'll be discussing three animal news stories from across the globe starting with a story about a woman charged with two counts of animal cruelty after leaving her two dogs in a hot car. Believe it or not, despite all the media attention this issue has brought up, it still happens. People are still cluelessly leaving their animals in cars while they shop, see a movie, or go out to eat. No regard for their pets or their well being as it's often excruciatingly hot out. Next, we'll be discussing another animal cruelty bust at a chicken facility in British Columbia. A passerbyer noticed what she thought to be abuse and called police who are now investigating the incident. Two times in two weeks? Are we ready to admit there are flaws in these industries and it's time to step up and start monitoring these facilities a little more regularly. Why is it always undercovers or witnesses discovering it? Why aren't the companies seeing it and nipping it in the bud before it hits the media / police? Because they don't care and aren't watching. Lastly we'll be discussing a horrific incident in Melbourne Australia. A kangaroo was shot at least 3 times, tied to a chair, dressed, and posed for photographs. Sickeningly, police are looking for witnesses but the sad thing is that there was definitely someone who saw and did nothing. Police said it was a public area with reasonable traffic so if that's the case, why was no one alarmed enough to call authorities? Kangaroo or not, I see people tieing anything up and doing that sort of thing, I'm alerting authorities. It's just another example of our world's disregard for animal wellbeing. I don't necessarily love salads but throw in some carbs and you've got me hooked. I have made panzanella salads a variety of ways in the past and I usually make the bread the deciding factor in my flavour combinations. As I had a leftover loaf of seasoned focaccia bread handy, the flavours took me in a Mediterranean direction.
We've got fresh cucumbers, peppers, onions, sliced black olives, feta cheese, and fresh herbs tossed in a light and delicious vinaigrette. The bread soaks up the dressing and becomes perfectly pillowy in the salad for a fabulous panzanella you're going to love. Head to the RECIPES page! HAPPY VEG MEDITERRANEAN PANZANELLA SALAD Panzanella salads are such a great way to use up all those extra veggies in the fridge and also an excellent way to use every last bit of your fresh, store bought breads. I had almost an entire foccacia loaf that was going stale so I knew what flavours I wanted to pair with the seasoned loaf of bread. I went in a Mediterranean direction this time around with fresh cucumbers, red onions, bell peppers, olives, and feta cheese for extra deliciousness. The resulting salad is surprisingly light and fresh with the bread really taking center stage. It soaks up just enough dressing and flavour and still retains its texture. Remember! With all panzanella salads, they are at their best that day. After even 1 day, the bread will be the deal breaker. If you've underdressed your salad the bread will have soaked it all up overnight resulting in an unpleasantly dry salad. On the other hand, if you've overdressed you can expect that by the second day the bread will be saturated and not pleasant whatsoever. ![]() ROASTED CAULIFLOWER STEAKS
Cauliflower is one of the most versatile veggies on the market and they're extremely good for you to boot! I love cauliflower raw but sometimes I'm craving something a little heartier, and that's why these steaks are so fabulous. The cauliflower is basted in EVOO and a delightful seasoning blend and roasted whole until a gorgeous crust is developed on the outside. Once sliced, the cauliflower is tender but still retains a little bite which is perfect in my opinion. Serve them up with a side of mash and veggies for a balanced and seriously delicious meal. |
