Heirloom Burrata Plate

Summer is the best time to enjoy fresh produce, especially tomatoes in my opinion. heirloom tomatoes are absolutely fabulous. They have so much tomato flavour and for me, scream summer vibes.

This little tomato burrata plate is easy, gorgeous eats, and lets the heirloom tomatoes shine. Quite simply, we're dressing up some gorgeous sliced heirlooms with chili oil, sweet balsamic reduction, pepper flakes, fresh basil, grana padano, and gorgeous burrata.

You get creamy from the cheese, freshness from the toms, sweetness from the bals reductsch, and heat from the p flakes and chili oil. It's balanced, gorgeous, and easy AF to make. Head to the RECIPES page.

Creamy Risotto with Roasted Green Veggies

There's really nothing better to me than a big, creamy and delicious bowl of risotto. I love it, it's definitely one of my favourite things to make. I wanted to do something a little different this time to make my risotto more of a main, rather than a creamy side.

I roasted up a combination of green veggies including broccoli, leeks, and snap peas, until charred and perfectly tender, and whipped up m y super simple, and super cheesy risotto. Then, you slap those gorgeous roasted veggies on top of your creamy risotto for the perfect pairing. The charred flavour of the veg against that decadent, creamy risotto is a total vibe.

2 Animal News Stories from the United States

I'm commenting on some big animal news stories coming out of the United States! First, Oregon has banned the sale of puppies and kittens from pet stores, tackling the puppy mill industry and supporting the Humane Society's work. Secondly, Oregon has banned the sale of new cosmetics tested on animals, a monumental victory. Lastly, Massachusetts is on track to ban animals in circus' and other traveling exhibitions. Long overdue imo.

Tex-Mex Zucchini Boats

Take advantage of zucchini being in season with my Tex-Mex Zucchini Boats. This recipe really couldn't be easier to make which is why I think it's so wonderful, outside of being colourful and delicious.

Impossible Beef, cooked down with jalapeno, pepper, and onion, seasoned with a combination of Mexican chili, cumin, and Tex-Mex seasoning, and finished with a blend of old cheddar & mozz. Baked in inside gorgeous yellow zucchini under a layer of melty cheese and sliced jals.

This recipe only takes 30 minutes in the oven, which means it's ready in a flash. Melty and golden brown, my Tex-Mex zucchini boats are available now under the RECIPES tab.

Creamy Cherry Tomato Gnocchi

Cherry tomatoes are plump and juicy, a little sweet, and make the most gorgeous sauce when cooked down with other ingredients like wine, basil, and pepper flakes. When you ditch the canned tomatoes, you want to crank up the tomato paste a little bit to give the fresh tomato sauce some depth and richness.

After blending our sauce with some cream, it's rich and velvety. Then, it's as simple as boiling some gnocchi and finishing with some grana padano and pasta water until creamy and wonderful.
