Artichoke Pesto Bean Bruschetta

Bruschetta is the perfect dish to play around with in the kitchen. You really can't go wrong if you have the fundamentals down. Crispy bread, some kind of cheese, and accompanying toppings.

I have shared several recipes for bruschetta in the past but this one is a little different thanks to the tangy Artichoke pesto! Marinated artichokes, pesto, garlic, and EVOO, are blended up until broken down and combined creating the perfect spread for the bruschetta.

Topped with a collection of mixed beans, onions, grape tomatoes, and bocconcini cheese, there's absolutely everything to love about this super simple snack. Head to the RECIPES page!

Rainy Day Stew

Inspired by a string of rainy days, this simple stovetop stew is full of flavour and hearty veggies. Vegetables like chunky potatoes, sliced carrots, celery, and leek, along with the flavours of thyme and rosemary which I absolutely love using in stews. 

I've also used the potatoes in the stew to thicken it without the use of any starches or flour and the resulting stew is so thick and delicious, no need for additional starches! Simply blending a portion of the stew and returning it to the pot, thickens everything up so beautifully. It's definitely a tip that I'll be utilizing in the future as often as I can.

ARTICHOKE PESTO BEAN BRUSCHETTA

Bruschetta is such a fun recipe to play around with. It's pretty foolproof as far as toppings go, pretty much anything will be delicious sitting atop crispy, baked bread.
For this Bruschetta recipe, I've whipped up a quick artichoke pesto that's both savoury and tangy & so delicious. 
For the toppings, I decided to go with mixed beans for texture and protein along with fresh grape tomatoes, red onions, and bocconcini cheese. Bake everything up until the bread is nice and crispy and the cheese is melted and you've got a wonderfully satisfying bruschetta that's great for sharing or devouring on your own!

This stew was inspired by a string of rainy days we had here in Windsor recently. Stew is such a comforting dish that's perfect for rainy days where you're locked up inside the house.
This stew has all of your favourite stew veggies including celery, carrot, leek, and potatoes. It's seasoned with familiar spices and herbs including dried thyme and rosemary and cooked until thick and delicious.
I'll also share with you guys a tip for thick and delicious stew without the use of any flour or thickening starches!

Creamy Cauliflower Sauce Cheese Tortellini

Alfredo sauce is such a rich & luxurious sauce. There's something about a creamy, dreamy sauce that's so enticing and hunger inducing. The only problem with traditional alfredo style sauce is the calories / fat intake. Alfredo sauce is so creamy and dreamy because it contains mass amounts of cream and cheese which translates to large amounts of fat and empty calories.

That's where cauliflower alfredo steps in! Cauliflower, when cooked down and blended, actually creates a thick and creamy sauce. Spiced correctly, it literally gives you the same delicious, creamy, luxurious feel an alfredo would give you with the added benefit of it being cauliflower!
Preparation is also super simple as well. It's as simple as cooking down the cauli in a seasoned liquid, blending it with a little milk, and tossing it with your favourite pasta. Easy as that!

If you're in the mood for something super rich and seemingly naughty for dinner tonight, cauliflower alfredo is where it's at!

Roasted Veg over Couscous

There's something so inviting about a sheet pan filled with an assortment of colourful, vibrant, roasted vegetables. Not only are they absolutely gorgeous, they're super delicious and healthy as well.

Today's recipe is perfect for weeknights when things are super hectic because it takes no time at all to roast veggies or prepare couscous. Both parts of this dish are super easy and stress free and taste absolutely wonderful together.

The fluffy couscous is the perfect vessel to serve some of the beautiful roasted veggies because it soaks up some of the veggie juices and flavour just perfectly. The two are actually a match made in heaven!
