Roasted Red Pepper Lasagna with Zuccs & Pesto

I love lasagna. It's probably one of the most comforting dishes you can eat in my opinion. It's beautiful to look at of course, with its many tender layers, and so hearty and filling. You don't leave hungry from the table after eating lasagna, that's for sure.

I made a roasted red pepper sauce that I finished with butter & cream to make it extra luscious. I also whipped up my Walnut & Basil pesto, a creamy ricotta filling, and fried some gorgeous zucchinis. Then, it's all about layering it up, baking until bubbly and beautiful, and serving up a slab.

Bill to Ban Pet Sales from pet Stores Awaits NY Gov. Hochul's Decision

A bill that would ban the sale of cats, dogs, and rabbits, from pet stores awaits a final decision from New York Governor Kathy Hochul. The bill would stop pet stores from selling animals and would also tackle NY's contribution to the horrific puppy mill industry. For every animal purchased, a shelter animal dies. The only decision is to sign the bill and ban pet stores from profiting off of animals.

Potato Chowder

Ok y'all, I peeped the upcoming forecast and it looks like Fall weather is finally approaching! I love everything about Fall guys! Comfy sweaters, cozy sweatpants, pumpkin spice everything, horror movies, and soup. Let's celebrate the start of Fall with my Potato Chowder.

Tender cubes of potatoes, fresh corn, nuttiness from a cheese rind, heat from pepperoncini, and a creamy base for everything to swim in. It's absolutely delicious and I couldn't think of a better welcome home fall dish than this chunky, creamy chowd.

UPDATE - Windsor Man gets 90-Day Sentence for Animal Cruelty

Windsor Man. Tyler Vassell, was sentenced to 90 days of jail to be served on weekends, as well as a 10-year ban on owning firearms and $1, 800 in restitutions. Given the extreme violence he displayed, is this sentence truly severe enough or is it a touch too accommodating?

Tex Mex Chipotle Chili

Chili is a great meal to make for so many reasons. First of all, it's economical and can feed multiple people which is a bonus. Secondly, it's just so versatile in that you can enjoy it on its own, or on rice, potatoes, or any starch really. It's a fave of mine.

I went with a Tex Mex inspiration for this one with my seasonings. This chili is so rich and flavourful thanks to the combination of spices, chipotle peppers, and the amount of time it's cooked. When it comes to chili, the longer you cook it, the better it's going to taste. The only hard part to this is smelling it for hours without eating it right out of the pan.

Sundried Tomato Pesto & Sweet Corn Flatbread

Where have these flatbreads been my whole life? That's the question I asked myself after taking my first bite of my Sundried Tomato pesto & Sweet Corn Flatbread. Not only is this meal incredibly easy thanks to pre-made flatbread, but it's absolutely delicious and takes advantage of fresh corn before it disappears until next year.

I made a super easy sundried tomato pesto, grilled some fresh corn, and then piled toppings on my flatbread. It's as simple as baking for less than 15 minutes and you've got a golden brown flatbread, melty cheese, and fresh, delicious toppings.

Some 2, 500 lions, elephants, zebras, buffalo, and giraffes, are taking a 700 kilometer journey north from their Southern reserve due to never-ending drought plaguing the area. While I applaud the initiative, if we don't vigorously tackle the climate crisis, how long until the northern region faces similar perils?

Garlic Peri Peri Brussel Sprouts

Let's turn up the heat around here with my Garlic Peri Peri Brussel Sprouts. As I'm sure y'all know by now, I like things hot and spicy and my Peri Peri Brussel Sprouts definitely crank up the heat.

I used my favourite Peri peri sauce from Nando's but you could easily substitute with your favourite brand of peri peri sauce. The sprouts are basted & roasted, and then basted again. They're finished with more of that glorious, garlicky peri sauce and some sliced green onions.

I could barely stop myself from eating the whole bowl after I got my photos so be prepared to have your mouth tingling with excitement and your stomach jumping for joy over these delicious sprouts.
