Spicy Chilaquiles

Spice up your Sunday brunch with my Spicy Chilaquiles recipe. It all starts with frying up a batch of chips. Although you could also use store-bought tortilla chips, I had burrito wraps lying around so it made sense to use them up. Plus, there's nothing better than freshly fried up chips.

Once our chips are golden brown and seasoned, we toss them in some gorgeous red sauce, and top them off with perfectly fried, runny eggs. Then, we garnish to our heart's content. There are so many yummy options for garnishes with a dish like this. Think sliced jals, pickled onions, hot sauce, cilantro, feta, green onions; the options are endless.

Grilled Zucchini Lasagna

Zucchini is still in season for a little while longer, which makes this the perfect recipe, because we're ditching the noods for some gorgeous, grilled zucchini.

Layers of tender, grilled zucchini, creamy ricotta filling, and my signature blended tomato sauce, baked under a layer of mozzarella until bubbly and gorgeous. I served it up with some fresh basil and finely shredded grana padano.

What I love about this recipe is it still gives you that comforting lasagna feeling, but cuts back on the carbs. This lasagna eats a lot lighter than your traditional lasagna which makes it perfect for both summer, and winter meals. Head to the RECIPES page.

Nova Scotia Renters Forced to Surrender Pets to Find Accommodations

Amidst a Canada wide housing crisis, landlords are getting away with abruptly banning pets, forcing families to search for other accommodations, or surrender their furry family in order to keep their rental in such a difficult housing market. Without federal or provincial protections in place for pet-owners, shelters are bursting at the seems with surrendered pets, and renters are forced in to emotionally difficult situations that tear their family's apart in order to stay housed.

Burrata Panzanella

Don't say goodbye to summer without making my Burrata Panzanella Salad! Panzanella salad is actually one of my fave summer salads because it requires so few ingredients to create something delicious.

First, you need some older bread, toasted in the oven until crisp and golden. A simple vinaigrette of lemon, dijon, and EVOO, some summery, gorgeous cocktail tomatoes, and herbs. Once tossed, the crisp bread soaks in some of the vinaigrette and becomes slightly chewy, retaining a little crisp. It's such a gorgeous salad, economical, and frankly, anything served with burrata is a win for me!

Shredded Veggie Pancakes

Potato pancakes are definitely up there with some of my favourite breakfast foods. So crispy and glorious, smothered in sour cream, ugh, the best. To switch things up, I decided to include some carrot and zucchini in the traditional potato mixture.

Zucchini and potato pair perfectly together, and with the sweetness of the carrot, it's a match made in heaven. Fried to golden brown perfection and finished with tangy sour cream, salty feta cheese crumbles, green onions, and spicy Thai chilis.

Bill To Ban Cruel Leg-Hold Traps / Snares On Wildlife Refuges reintroduced in the United States

Steel-Jaw leghold traps & body snares, are agonizingly cruel to the unfortunate creature that gets snapped inside one of them. These traps snap at such a force, that bones are undoubtedly broken. Worst of all, they don't die. They lay in pain for hours until a human ends their life, or they become an easy target for a predatory species.

Shockingly, these traps are still permitted on a whopping 43% of wildlife refuges putting non-target species at risk. It's time to remove these from wildlife refuges and spare innocent creatures agonizing cruelty. Learn more under the ANIMAL NEWS tab.

Spinach & Artichoke Tagliatelle

Another delicious, vegetarian pasta dish, coming your way here with my Spinach & Artichoke Tagliatelle with White Beans! I love this recipe because it's quick, flavourful, and super easy to whip up.

The sauce is a combination of seasonings, wine, and pasta water, simmered until glossy and reduced. I included a hard cheese rind which infuses nuttiness in to the sauce creating a bit of depth. Don't forget to pluck it out prior to service!
