Draft to Return Grizzlies to the North Cascades Released

A draft to rehabilitate grizzly bears in the North Cascades ecosystem in the United States, has been released, with public comments / concerns available to be submitted until November 13th, 2023. This comes after the first attempt to rehabilitate grizzles was halted in 2015 by the Trump administration, despite 159, 000 comments of support from the public.

Reintroducing grizzly bears is something I support whole-heartedly; my concern lies with whether they will remain protected after their reintroduction. When you look at grey wolves, they spent 45 years under federal protection, only to have those protections lifted as state's throughout the U.S. lifted hunting bans and opened wolves back up for sport hunting. 45 years of effort only to watch them get shot and killed for fun?

Whipped Ricotta with Roasted Potatoes

Considering I created this dish on a whim, I really couldn't be more pleased with how it turned out. You get creamy, you get spicy, you get crispy, you get citrusy, literally, all the right notes coming together in every delicious bite.

Whipped ricotta is traditionally done in a mixer, but I did mine in my Vitamix blender because I don't own a stand mixer. Shame on me. Anyways, blended with EVOO and cream until velvety and luscious, and served with crispy, oven roasted taters. Finished with loads of pepper flakes, lemon zest, and some gorgeous herbs.

Skillet Cheeseburger Mac

This dish is giving Hamburger Helper, but home made vibes. It's savoury, easy to make, and easy to clean up, as it's a one-pot meal and I'm always fond of minimal; clean up after testing recipes.

A simple sauté of onion & garlic, Beyond Meat beef, seasonings, tomato paste, and flour, brought to a boil with milk & plant-based beef broth. Then, it's as simple as stirring in your noodles, covering, and simmering for 10ish minutes.

To finish, we fold in some aged cheddar and a splash of cream for a little extra richness and voila! Super easy, super flavourful, and available now under the RECIPES tab!

Grilled Sourdough with Pesto, Tomatoes, & Burrata

You guys know I'm a sucker for piling things on top of crispy, grilled bread, particularly sourdough. It's quite literally, the perfect vessel for some gorgeous toppings as it sits in all of its crispy, golden glory.

We're grilling up some gorgeous sourdough and giving it a garlic rub down before slathering it in prepared pesto, sliced tomatoes, dreamy burrata cheese, chili oil, balsamic reductsch, basil, grana, sumac, and s & p.

Cheesy Enchilada Stuffed Shells

We're switching things up with my Cheesy Enchilada Stuffed Shells. Similar method to a traditional Italian style shell, but with Mexican inspired flavours.

Our enchilada sauce is a combination of veggies, black beans, green chilis, prepared enchilada sauce, and broth, brought to a boil and reduced until gorgeous. Next, we're stuffing some jumbo shell pasta with a seasoned ricotta filling, smothering them in our sauce, and baking them under a blanket of melty cheese, Tajin, jalapenos, and red onions.

What you get is a dish of melty, bubbly perfection. The shells are so flavourful, I had to stop myself from eating the whole tray myself. Head to the RECIPES page <3
