Cheesy Polenta with Chili Spiced Veggies

Polenta is great because not only is it economical, it's extremely versatile. You can add to it any kind of flavour you want and pair it accordingly. It's such a fun ingredient to play around with in the kitchen.

Today's recipe for cheesy polenta incorporates cheddar, which melts and infuses its flavours into the polenta so wonderfully. When you're looking for that cheddary flavour, make sure to use medium or old cheddar, light or mild will not provide that cheddary flavour you're looking for.

For the topping, I've sauteed some delicious veggies in a chili inspired blend of spices that really pops against the rich, cheesy polenta. Finished with a sprinkling of fresh cilantro and some hot sauce for good measure, the dish is comforting, rich, and quick to prepare.
