Sour Cream & Dill Scalloped Potatoes

​Another twist on one of my favourite side dishes growing up. 

Scalloped potatoes are such a delight to prepare and eat. There is something so enticing about them when they arrive at the table that gets everyone excited to dig in.

This version is especially exciting thanks to the fresh dill. The fresh dill provides a welcome burst of flavour and tang that cuts through the richness of the creamy sauce the potatoes are cooked in. It's quite the welcome combination of flavours!

Chili Spiced Kidney Bean Sliders

Burgers are one of those foods that everyone enjoys. They're a quintessential part of a lot of North American's diets and find themselves on our dinner plates regularly. Personally, I love the burger varieties offered by YVES Veggie Cuisine and Gardein but it's also nice to whip up your own patties from time to time.

In the past, I've prepared patties using black beans as well as white cannelini beans and both patties turned out wonderfully. This time around, I've made red kidney beans the star of these burgers.

Bean patties are tremendously simple to make and delicious to eat. It's as simple as breaking down the beans in the food processor, spicing them, and making patties. It's that simple!

I've gone with a chili inspired spice blend mostly because red kidney beans regularly find themselves at home in a big old comforting bowl of chili. Cumin, chili, oregano, and garlic are a few of the spices you'll want to have on hand for this recipe.

It's very easy to take these from sliders to full sized burgers. Simply form larger patties when preparing them and you'll cook them just the same!

OTATOES

Scalloped potatoes are probably one of my favourite side dish meals. I remember all of us kids loving the cheesy boxed variety growing up. For that reason, I always have potatoes on hand in case the urge to devour scalloped potatoes hits me. This version has a very classic pair of flavours; tangy sour cream and fresh, flavourful dill. What we end up with is a batch of creamy, fresh, and delicious scalloped potatoes baked up to perfection and ready for its close up!

CHILI SPICED KIDNEY B
EAN SLIDERS

Sliders are such a fun dish. They are so enjoyable to make and transition from appetizer to main course meal depending on what you decide to use them for. These sliders are made with red kidney beans and spiced with a blend of chili inspired flavours. They fry up in no time and are so tasty regardless of what you put on them. I'm thinking lettuce, tomato, and chipotle mayonnaise. You'll just have to wait and see!

Battered Zucchini

Fried food is fabulous. It may not be the very best thing for you as far as your health is concerned but I've always said, everything in moderation. 

I recently had the pleasure of visiting a Greek sit down restaurant for the first time and tried a dish called Kolokithi. Lightly battered zucchini strips that are finished with a sprinkling of salt and herbs. It was so bloody wonderful for being something that was so very simple.

I've whipped up my own batch and tested a few recipes for batter until I found the one thast would give me the lightest, crispiest results. The key is soda water. The carbonated water really gives you a light and airy batter perfect for frying these zucchinis!

Asparagus & Potato Soup

This soup actually came to be after I discovered I purchased gorgeous asparagus from the market and left it in the fridge to wither and die. After discovering I had left it in there for a few days, I knew I had to use all of it right away so soup was naturally the best option!

This soup offers up some delicious flavours from the asparagus as well as the vegeta and fresh thyme. With every delicious bite you'll find loads of fresh potatoes, asparagus, and other supporting veggies. 

TIP: Asparagus is so magical when it retains a crisp but when it is cooked in a soup it will likely lose that. Reserve the tops and add them at the last minute to keep them fresh and crispy when the soup is served!
