Savoury Potato Topped Stew Tarts

This recipe came about as I was walking through the grocery store and happened upon frozen tart shells. Immediately I started running ideas through my head when suddenly I was struck with a savoury idea.

These tarts require quite a large time to prepare because of the slow cooking however you could certainly prepare the stew on the stove top and have it ready in under an hour.

I think y'all will love em, I know I did!

The Fork Test

When cooking vegetables, timing is usually key. The fork test is the difference between a perfectly cooked brussel sprout and a pile of mush. Overcooked vegetables are such a turn off and can actually ruin a dish.

Often in my recipes I will tell you to fork test your food after a certain amount of time. In the case of most vegetables, it simply means pressing the fork gently into the food and seeing how easily the fork should slide through. Too much resistance means your veggies are still a little raw.

As a general rule, look for the thickest portion of the product your are testing. If the fork slides through easily, you know that all your veggies are likely cooked. When a recipe tells you to cook for a certain time, begin fork testing 5 minutes earlier than their suggested time just in case!


It's a simple tip for enjoying perfectly cooked vegetables every time!

Zucchini Lasagne

This recipe is actually a really fun take on traditional lasagne. We still have noodles, we still have sauce, and we still have cheese, but in a fun and fresh way!

It all starts with a beautiful tomato sauce. A good tomato sauce will make any dish amazing and it's always good to have a few good tomato sauce recipes under your belt!

Layers of delicious zucchini slices replace the traditional lasagne pasta for a fresh twist. Zucchini usually needs a little help in the flavour department so make sure to season those slices before layering them!

A hearty cannelini bean and ditali pasta salad is stuffed in between the zucchini and kept together with delicious mozzarella and ricotta cheeses. A little time in the oven and you've got a delicious, bubbly, zucchini lasagne!

Here's what's coming up for next week!

1. My Zucchini Lasagne is a hit! Layers of cheesy bean salad stuffed between sliced zucchini and baked under a delicious, bubbly layer of cheese. So delicious and a nice twist on traditional lasagne.

2. Next up, a super simple and fresh Israeli Salad. All it takes is a few simple ingredients and a finishing touch of lemon juice for a light, refreshing salad. You will love how simple it is!

3. Finally, gorgeous Savoury Stew Tarts! Although this dish is quite time consuming, it`s worth every second of labour in the end. A beautiful vegetable stew slow cooked and filled in to tarts and topped with simple, sage infused mash. These tarts are gorgeous to look at and so delicious! I`m excited about sharing this one with you all!

Save room in your bellies this week for seconds!

Roasted Chickpeas

Looking for a delicious snack?

LOOK NO FURTHER!

Roasted Chickpeas are so delicious and satisfying, everyone will love them! I used a very simple seasoning blend which enhanced the nuttiness of the roasted chickpeas. Don't be afraid to play around with spices and herbs when it comes to seasoning because these taste great with all sorts of flavours!


A few tips.
  • When Roasting with herbs, keep in mind this general rule. Fresh herbs are better for tossing cooked product in and dried herbs are suggested for high temperature roasting. Fresh herbs will turn black or brown and look rather unappealing after being roasted.
  • It is important to use enough oil and have the peas thoroughly coated to achieve best results when roasting.
  • This snack is best when consumed immediately after cooking. They don't reheat well.

Slow Cooker Spinach & Artichoke Dip

There's something comforting about the Slow Cooker, just the thought of a warm, slow cooked meal makes me smile. In this case, it's all about being a little naughty!

The slow cooker also churns out some wicked dips that require nothing more than tossing ingredients in and waiting! This dip is sinfully creamy, loaded with fresh spinach, and so comforting. The idea of eating the entire thing yourself is not quite so comforting so make sure to serve for guests! :P

Recipe 1 - ROASTED STEW VEG

Growing up, my mother made the most delicious roasts and lining the bottom of the roasting pan were the drippings, and delicious, savoury roasted potatoes and carrots. Those vegetables were beyond delicious. Well seasoned, saturated in flavour, and roasted to a tender perfection, they were always my favourite part of the meal.

Roasting vegetables can be achieved so many different ways depending on how you intend to use them.  As a general rule of thumb; uncovered at high temperatures will give you a crispy outside (think crispy potato wedges!) or a charred exterior (roasted red peppers) and covered at a lower temperature will roast things to a tender state (roasted carrots, roasted eggplant just as examples.)


In this case, these delicious roasted vegetables are roasted to a tender perfection and quickly browned within the last ten minutes of cooking. They are flavoured with the right aromatics and spice to lend to the overall dish.

They are quite delicious eaten just as they are but they are also a great starting point for another recipe. You could easily add these to a soup or stew to give another layer of flavour.




These vegetables smelled like my childhood and left me with a smile and I hope they do the same for you.
