Judge Reissues Protections for Gray Wolves Through Much of the US

A judge restored protections for gray wolves through much of the United States, a victory for activists and gray wolves but also a cautionary tale. Wolves were delisted just over a year ago and are already faced with the possibility of further endangerment / extinction. We must change our ways before we plunge everything around us in to extinction.

Koala Bears Given Endangered Species Act Protections in Australia

Australia has finally issued Endangered Species Act protections to koala bears with up to 72 million Australian dollars allocated to their restoration. The funds will go towards helping to protect their habitat, rehabilitate the species, and determine whether future developments will directly impact koalas. Learn more under the ANIMAL NEWS page.

Gnocchi, Broad Bean & Kale Pot Pie with Phyllo Crust

When i created my spanakopita recipe a week or so ago, I bought far too much phyllo because I wasn't sure how much I'd need. I was left with an additional box and really didn't have a plan until I concocted this little pot pie sitch.

We've got a stew of gnocchi, broad beans, and kale, seasoned simply with some supporting nuttiness from a cheese rind. I always keep my hard rinds because they add something special to soups & stews. Anyways, we then top with our phyllo brushing each layer with butter and grated grana padano cheese.

What you end up with is this beautifully golden brown, crusty masterpiece. It's delicious, hearty AF, and honestly, quite simple to put together. Head to the RECIPES page.

UPDATE: No Charges for Cleaner Who Stuck Arm in Tiger Enclosure

So disappointing y'all. A man who stuck his arm in to a tiger's enclosure at a Florida zoo and was subsequently attacked resulting in the tiger being euthanized will not face charges. Apparently, there were no existing criminal laws that were applicable so the man was able to skirt charges. Head to the ANIMAL NEWS page for the full story.

Cajun Breakfast Poutines

We're spicing up brunch this time around with my Cajun Breakfast Poutines. It has everything a brunch-tine should have; crispy roasted taters, squeaky cheese curds, a spicy, flavourful Cajun inspired gravy, and green onions.

The perfectly fried egg sits beautifully atop your mountain of smothered taters & curds, and once that golden yolk cascades down on to the bounty below, there's really nothing more that you could need for a weekend brunch.

Spanakopita

For whatever reason, phyllo dough really intimidated me but I decided to (finally) take a risk and try to prepare spanakopita on my own. I did some searching online for cook times, similar ingredients etc., and then put my recipe together. I gotta tell you guys; phyllo is actually super easy to work with and if I can do it, you guys can surely do it as well.

The filling is loaded with spinach, ricotta, feta cheese, and fresh dill / parsley. It's super delicious. The phyllo is delicate but surprisingly easy to work with and each layer is slathered in melted butter to keep the layers separate and the top nice and gloriously crispy. Trust me, you want this recipe.

Italian Fashion Brand Moncler, announced that they would be ending the use of fur products in all future lines and would stop sourcing fur this year.
