Brussel Sprouts are probably in my top 5 veggies. This is especially interesting because I wasted so many years thinking I hated them. I cringe when I consider how many delicious dishes I've missed out on because I tried sprouts as a child and hated them. 

These sprouts certainly help make up for last time with their deliciousness. Roasting brussel sprouts is my favourite way to prepare them because they get lightly charred on the outside but become so tender on the inside. It's literally perfection!

This time around, I decided to try roasting them with parmesan and balsamic which have a reputation for pairing well together. They're lightly tossed and roasted before lightly tossed again and finished off in the oven until cooked.

The flavour combination is definitely a winning one! The sprouts were absolutely delicious! I loved the contrast in sweetness from the balsamic, bitterness of the sprouts, and saltiness of the cheese coming together in every delicious bite.

Trust me, you'll want brussel sprouts for dinner EVERY night after eating them this way!

BALSAMIC & PARMESAN ROASTED BRUSSEL SPROUTS

It's hard for me to imagine that I actually thought I hated brussel sprouts for the longest time. I wasted so many years avoiding these delicious veggies that I've got lots of eating to make up for.
I love roasted brussel sprouts and this super easy recipe is a great way to give them an abundance of extra flavour. Balsamic vinegar and parmesan cheese are a match made in heaven and create this perfect flavour for the sprouts that's absolutely wonderful. The tang of the vinegar and the savouriness of the cheese really amp up and highlight the flavours coming from the sprouts. Totally delicious!

JALAPENO & CORN BISCUITS

Fresh baked biscuits are wonderful and depending on what you put in them, they can be paired with just about any meal. These delicious biscuits are a combination of naughty and nice with the jalapeno and fresh corn. The jalapeno gives the biscuits a little spice while the corn adds texture and flavour popping in your mouth as you make your way through the biscuit. They're a perfect match for these super simple biscuits.

You can't go wrong with tacos, that's a fact! They're like, the perfect bite every time. In fact, every time I go out for Mexican food, I usually order my meal with a taco or two on the side because I just love them so much!

I've got a wonderful taco recipe for you guys today that will certainly satisfy those taco tastebuds! We start with our meaty layer consisting of beans, cauliflower, and Yves veggie ground cooked down with some familiarly Mexican spices. Sprinkle on some delicious cheese and finish with a super easy to make, tangy cabbage slaw.

The slaw is the perfect compliment to the tacos. It offers a crunch and a cooling factor that really plays up the taco's flavours.

Creamy broccoli soup  is one of my faves on a cold evening and it's especially delicious with some melty cheddar folded into it. The cheddar makes the soup extra rich but also gives it additional flavour that pairs perfectly with the broccoli.

Ready in under an hour, the soup is ridiculously easy to whip up and oh so satisfying. I've always found blended soups to pack more flavour and that's especially true in this case. 

It's important to use a cheddar that is older so that the flavour really comes through. Marble or light cheddars aren't flavourful enough to stand up against the soup. Old, Medium, or Sharp Cheddars are your best options for cheddary flavour in the soup!

CREAMY BROCCOLI CHEDDAR SOUP

Broccoli and cheddar cheese are a match made in cheesy heaven. I've enjoyed many a casserole with smothered broccoli and I've enjoyed every gloriously cheesy minute of it. 
This soup is exactly what its name suggests, a deliciously creamy broccoli soup blended until smooth followed by heaps of flavourful cheddar cheese folded into it. The sharp cheese brings extra savouriness to the soup along with melty goodness that just makes the soup so much better. 

BEAN & CAULI TACOS with CABBAGE SLAW

Tacos! Tacos! Tacos! Tacos might very well be my favourite food although I do admit I say that quite often, I love tacos. A good taco is the perfect balance between spice, creaminess, heat, and crunch. Every bite should provide all of the above and that's exactly what these tacos have going on.
Cauliflower and beans spiced beautifully make a perfect meaty layer followed by a simple, tangy red cabbage slaw that provides a crunch and cooling factor to each taco. These are worth the taco neck you'll likely end up with!
