SEAFOODLESS BOIL

What is a "boil"? This southern dish typically consists of a variety of vegetables, meat, and seafood boiled away in a massive pot with a robustly seasoned broth. Everything is then dumped out onto an eating surface and guests help themselves to the variety. 

My dish is inspired by this concept with fresh, chunky vegetables and a seriously delicious broth. The vegetables become so tender and soak up all of the wonderful flavours of the broth, it's quite wonderful. The broth was so flavourful, I saved it and reused it in another dish!

SIMPLE STEW

With the warmer temperatures creeping up, there's not much time left to truly enjoy a warm, comforting bowl of stew. Technically, you can eat stew year round but I just find it is so much more enjoyable when there's still a chill in the air.

This quick and simple stovetop stew recipe hits the spot. Tender potatoes, spring peas, and a wonderfully thick and delicious broth. I finished the stew with a plethora of fresh, green herbs that pop and add a layer of flavour and freshness. Let's enjoy stew together while the weather still cooperates. :)
