​CHICKPEA CAPRESE SALAD


Caprese salads are one of my favourites when it comes to the world of salading. I love how simple the salad is along with the delicious, fresh flavours, it's such a wonderful salad. I've taken a little bit of a different approach by adding chickpeas in this version. The salad becomes heartier and more filling but retains everything you love about it. Fresh basil, tomatoes, and bocconcini dressed in a simple to prepare balsamic vinaigrette. 

CREAMY PIEROGI & BROCCOLI CASSEROLE


I remember seeing something like this while I was trolling recipes online and thought it sounded like a fabulous idea. Why not make pierogis in to a casserole? This casserole is drenched in a warm, creamy sauce and baked under a layer of cheddar. Every bite is so rich and wonderful, it's definitely a recipe to hold on to!

Making dinner is always enjoyable until you get to the dishes. I loathe doing dishes but it's a small price to pay for a fabulous dish. With that being said, a delicious pasta dish that only requires ONE PAN is totally welcome! Such a simple dish with fresh basil, zucchini, pepper, and tomatoes and so easy to prepare. You guys will love me for this one!
