I've been in the kitchen working on perfecting the next few recipes so I wanted to share with you all where I am headed.
1. Corn and Black Bean Salad.
* Fresh corn sliced from the cob and mixed with rich black beans, green onions and cilantro. Finished with red pepper flakes and fresh lime juice and zest.
2. Mexican Inspired Lasagne
*Layer upon layer of cheesy goodness with loads of red & green onion, tomatoes, beans, and spicy meatless ground.
3. Ricotta Stuffed Grape Tomatoes
*A fragrant mixture of herbs whipped into creamy ricotta cheese and stuffed gently inside juicy grape tomatoes for a delicious snack!
