​BUTTERNUT SQUASH, CAULI, & POTATO CHOWDER

A chowder is typically a thicker, heartier version of a soup. This chowder certainly lives up to that reputation with a collection of hearty vegetables including tender butternut squash, fresh cauliflower, and delicious potatoes. A finishing garnish of lemon and fresh thyme ties all of the flavours together and delivers a seriously enticing bowl of soup. This soup freezes well so keep that in mind when preparing the recipe!

MINI POTATO & CREAMY PEA BAKE

I modeled this dish after a traditional scalloped potato recipe but I added a little twist. Blending up the peas into the sauce not only gives you a beautifully coloured sauce, but also allows you to enjoy the flavour of peas in every bite. The creamy pea sauce envelops the potatoes and really makes every bite so delicious. Everything is baked up until bubbly and lightly browned on top for a side dish that you'll be making again and again.
