SPINACH & ARTICHOKE HUMMUS

Hummus is such a fun dish because you can add just about anything to it and it will taste fabulous. In this case I've added a spinach & artichoke combination that is simply delicious. Hummus is such an easy dish to prepare and it's great for group hangouts or enjoying alone.

SUMMERY CHICKPEA SALAD

Chickpeas are super healthy and have recently been linked to weight loss. This simple summer salad is equal parts delicious and nutritious. A tasty vinaigrette and some great vegetables take these chickpeas to the next level.

CHILI STYLE SOUP

Not much has to be said about this dish. It's everything you love about a hearty bowl of chili but in a soup. We've got a super rich tomato broth and all the familiar chili veggies floating around. This soup can be made in large batches and frozen in advance!

Grilled Ricotta Sandwiches

Another simple, delicious summer sandwich. The grill doesn't let off as much heat so it's easy to keep cool with this sandwich not to mention it only requires a few ingredients to be delicious.

Ricotta can be so bland so it is important to season each half of the sandwich to make sure it`s flavourful and enjoyable. Slap it on the grill for a few minutes and what you`re left with is the perfect crispy / creamy contrast and a sandwich everyone will love.

I used a crusty roll but you can really use any bread you like for this sandwich and it will be great!

Veggie Garden Rice

One of my favourite sides is rice. I love a great rice dish with lots of flavour and lots of vegetables. What I especially love about rice is you can cater it to suit whatever flavour combinations the rest of your meal include. Rice is such a neutral dish you can spice any which way and it will pretty much be fantastic.

We've got ZUCCHINI, ROMA TOMATOES, and BUTTON MUSHROOMS along with a flavourful blend of spices. There's everything to love here so get to the RECIPES page!

Cheddar & Zucchini Muffins

I enjoy savoury muffins every now and again. Once you have a good muffin recipe it's super easy to add in additional flavours / ingredients to create new muffins.

In this case I've added some fresh basil, cheddar cheese, and fresh zucchini which will also help keep the muffins nice and moist on the inside.

They pair so nicely with a variety of dishes while also being a delicious treat on their own. All they need is a little smear of butter and they're delish!

CHEDDAR & ZUCCHINI MUFFINS

I love savoury muffins! These delicious muffins are cheesy and loaded with fresh zucchini which also helps keep them moist. They pair so nicely with so many main courses and are a nice change from sliced bread.

GRILLED RICOTTA VEG SANDWICHES

Creamy ricotta slathered on both sides of the bun with fresh spinach, tomato, and pepper wedged in between.Slap these sammies on the grill for a delightful contrast between crunchy & creamy!

VEGGIE GARDEN RICE

A lovely medley of vegetables and beans come together in this delicious rice dish. The more the merrier when it comes to vegetables, that's my motto. This rice is so tasty and works as a fabulous side to a protein main course.

Creamy Garden Veg Dip

This dip is along the lines of a spinach & artichoke dip but with a different supporting cast of veggies. When it comes to creamy dips like this you can easily swap or add veggies to cater it to your own tastes. In this case, it's all about the garden veggies. Peppers, carrots, and onions find themselves baked up in this creamy dip.

Fresh Brussel Sprout Salad

Cruciferous veggies including Kale, Brussel Sprouts, Cabbage, and Broccoli have anti cancer properties that are so good for our bodies but we often cook them away. This is especially the case with Brussel Sprouts. They are SO DELICIOUS steamed, roasted, pan fried, baked...the list goes on and on. With all of that being said, they can also be delicious raw when prepared properly.

This delicious brussel sprout salad is the perfect example of how to enjoy them raw. They are so delicious in a salad like this one and I think y'all are going to love it!

Grilled Eggplant Burgers

I absolutely love my indoor grill. It's such a wonderful way of cooking veggies without as much fat. Eggplants are notoriously fatty simply because they soak up a lot of the fat they are cooked in. When they are cooked on the grill, so little fat is required to cook them thoroughly that they are so much better for you!

My grill is teeny tiny, if you have a regular or even large sized grill this recipe will be much less time consuming. I had to cook the eggplant / tomato separately but with the right sized grill, you can easily complete everything simultaneously. With a larger grill you can also prepare more servings at a time.

The eggplant is meaty and tender, the grilled tomato adds a lovely tang to the burger and the simple, creamy mayo is the only condiment needed. This "burger" is super satisfying and ready in a flash!

Shaved Brussel Sprout Salad

As I've mentioned before, cooking your cruciferous veggies causes them to lose a lot of their anti cancer properties. This delicious salad of raw sprouts has a tasty supporting cast of veggies and a fresh vinaigrette. A wonderful summer salad!

Grilled Eggplant Burgers

Grilled eggplant slices are nice and meaty and make for great burgers. A fresh bun, grilled eggplant & tomato, and a creamy spread make for a delicious and super simple burger. Also, eggplant from the grill is much healthier and doesn't have the opportunity to soak up mass amounts of oil from pan frying!

This dip is along the lines of ones I've done in the past but with a different collection of veggies. All the familiar garden veggies find themselves in this luscious, creamy dip. Break out the pita crisps!
