I absolutely love my indoor grill. It's such a wonderful way of cooking veggies without as much fat. Eggplants are notoriously fatty simply because they soak up a lot of the fat they are cooked in. When they are cooked on the grill, so little fat is required to cook them thoroughly that they are so much better for you!
My grill is teeny tiny, if you have a regular or even large sized grill this recipe will be much less time consuming. I had to cook the eggplant / tomato separately but with the right sized grill, you can easily complete everything simultaneously. With a larger grill you can also prepare more servings at a time.
The eggplant is meaty and tender, the grilled tomato adds a lovely tang to the burger and the simple, creamy mayo is the only condiment needed. This "burger" is super satisfying and ready in a flash!
