I have to give my sister the credit for coming up with this recipe after she shared a very similar idea with me recently. Not being the biggest fan of mushrooms, I committed to writing and testing this recipe with her in mind but I ended up absolutely loving these!
Hollowed out portobello mushrooms caps stuffed with fresh medley tomatoes & bocconcini cheese, broiled until melty and delicious, and finished with fresh basil and parsley and a drizzle of balsamic reduction. Absolutely delicious and ready in a flash.
