When I first caught wind of this idea I was so excited. Back in my MED (Meat Eating Days), I loved mayonnaise based salad sandwiches. The creaminess of the dressing, the crispy freshness of the celery, and the toastiness of the bread all made one delicious sandwich.
Chickpeas take center stage here in place of the traditional chicken / egg / tuna/ and the results are wonderful!
