Cooking with Kyle - 2

I absolutely love visiting with Kyle, we have such a long history together it's still so wonderful to visit with her. One of my absolute favourite things about visiting Kyle? She loves to cook! I won't ever scoff at a free meal but when the meal is fresh and delicious that's a bonus!

We love our pasta! It's one of the easiest meals to make Vegetarian and delicious. Kyle is a meat eater but she has adapted a Meat Free Monday which I am so grateful for for! She also happens to cook a wicked Vegetarian pasta and here's what she came up with this time.

Loads of fresh vegetables including Broccoli, Zucchini, and Red Pepper all worked together in a simple, perfectly spiced butter and oil sauce that was so delicious! Sharp and flavourful White Cheddar to finish everything off, ugh, fabulous.

As always, we like to teach each other things and here's what tips we swapped this time around;

• I always quarter or halve my zucchini slices but she kept her slices whole which I loved. I feared they would be under cooked but keeping them whole kept them nice and juicy but tender and delicious!
• I gave her a tip regarding Red Pepper Flakes. When you cook with them, incorporate them in the beginning with your frying vegetables to really bring out those flavours and underlying warmth.
