Creamy Tex Mex Gnocchi Casserole

Gnocchi and cheese are a very flattering combination in that no matter what else is they're paired with, you can expect things to be delicious. There's just something about the two of them together that makes magic for your taste buds.

For this delicious casserole, I've whipped up a creamy cauliflower sauce infused with mex inspired flavours and tossed gnocchi and sauteed veggies together in it to be baked. Delicious veggies like zucchini, corn, and bell pepper, play up the tex mex inspiration and also taste fabulous when paired with melty cheese and tender gnocchi.
