Stuffing anything inside of pasta shells usually ends up being delicious and this dish is no exception. It all started with having an abundance of beans and my brain sort of took off from there.
Each shell is stuffed with cheddar and a spicy bean mixture made up of Romano & Black Beans, fresh jalapeno,garlic, and tomatoes and drizzled with the most perfect, flavourful enchilada sauce imaginable. I had no idea how easy it was to make enchilada sauce from scratch, trust me when I say eff the canned stuff and make it from scratch.
Stuffing the shells is definitely the most labour intensive part of this dish but it`s actually a great way to get friends or family involved in the process. Bake them up to perfection and serve with some beautiful cilantro or parsley and some smooth, creamy avocado for a delectable dinner!
