After scouring my recipes looking for the two I wanted to upload this week, I couldn't help but notice that I had an abundance of potato recipes in the archives. I didn't want to feature another potato week because I just had one a week or so ago. It soon dawned on me that I'm always going to have an abundance of potato recipes because I eat them nearly every day. So screw it, it's potato week again and frankly, every week is potato week is in my books! POTATO LEEK SOUP I've always enjoyed a creamy bowl of potato and leek soup. I love the subtlety of the leeks and the creamy, luxurious soup itself. At the end of the day, the flavours really work together for me and I decided to make a fresher version of a traditionally creamy soup.
