What a delicious dish this turned out to be. Incredibly flavourful and texturally on point, everything about this dish was a YAAAASSS. Green curry is flavourful and mildly spicy making it great for those who are reserved when it comes to trying new things. The roasted chickpeas are spiced and baked to perfection contributing a welcome crunch that works so well with the dish. A squeeze of lime juice to finish everything off and voila!

I figured a simple and delicious potato salad celebrating peas and spring was in order.
