Italian Inspired Chipped Potatoes

Chipped potatoes are delicious. Actually, let's take that a step back, POTATOES are delicious! I'm a sucker for any dish that incorporates potatoes. I actually got this idea when I was reflecting on my original Chipped potatoes recipe. One of the first recipes I put out was a twist on a recipe I had found online for German Chipped Potatoes. They were so scrumptious I knew I wanted to make them again but I wanted to try something different.

This version is inspired by my love of Italian food. Fresh tomato sauce, ricotta, bocconcini, and crispy chipped potatoes all combine to make a delectable side dish.

Potatoes are pretty versatile and pair with a variety of ingredients so you can really go crazy with what you decide to serve them with.

Make sure to crisp them up first so that they hold up to their toppings. If they are not brown enough prior to building the dish than the dish will likely be mushy and texturally not very pleasing.
