CRISPY POTATO BOWLS STUFFED WITH SCRATCH MADE STEW

This was one of  my favourite recipes to test because the idea of breading and baking potatoes sounded so enticing. Turns out, they're basically the coolest and most delicious idea. The breaded potato bowls could be stuffed with whatever your heart desires but I decided to whip up a quick stew to stuff inside of them. Scooping out the insides of the potatoes and making a quick mash was the perfect way to top the stuffed potatoes. They're almost like little pot pies without the pie crust! These savoury potatoes make a hearty main course that just needs a fresh salad on the side to complete them. They're fun, crispy, and super delicious.

Casseroles are the epitome of comfort food to me. A collection of delicious ingredients, a flavourful sauce, and some kind of special topping to finish things off. I just love the concept and the end result is even better. This casserole is wonderful because we've got colourful medley potatoes, cauliflower florets, and leeks, coming together in a creamy, bechamel style sauce, and baking under a layer of parmesan, breadcrumbs, and pesto. The resulting casserole is flavourful, creamy, and wonderfully hearty. The potatoes and cauliflower become so tender and pair perfectly with their creamy sauce. 
It's casserole day as often as possible at my place!
