Lasagne Potatoes

Another fabulous way to use potatoes! Layers of sliced potatoes, cheese, peppers, and a lovely tomato sauce baked until bubbly and perfect. A wonderful twist on traditional lasagne that will keep you coming back for more!

Here are some tips to keep in mind!

• Use your mandolin! Slicing the potatoes can be time consuming and the mandolin will cut that time drastically. It will also ensure your slices are all even and will cook at the same time.
• Want to save time? I cooked the potatoes from raw but you could blanch the potatoes for 5 - 10 minutes to start the cooking process. Make sure to let them thoroughly cool before you begin slicing them. This will cut about half the baking time off the total time.
• Add in your favourite lasagne toppings to spice this dish up! Mushrooms, onions, and olives would all be delicious!
