Loading a potato is a great way to spice up an already rocking snack or side. It is important though to be minimal with your fatty toppings to keep the potato on the healthy side. In some cases, I've seen them buried underneath sour cream, melted cheese, chili etc but this takes away the nutritional value of the dish and replaces it with fat and calories.
