This recipe was something that randomly came to me while I was sitting at my computer a few weeks back. I thought, I've fried halloumi many times, but I've yet to give it a crispy breadcrumb coating prior to frying.
What I ended up with was something quite balanced and delicious. You've got the crispy, breaded halloumi that fries up beautifully, the flavourful and rich pesto, and the fresh pop of the zima tomato bruschetta to round everything out. Don't be discouraged if you can't get your hands on Zima tomatoes, any grape or cherry tomato will do for the bruschetta.
