I was innocently scrolling through Instagram when I stumbled across Katie Lee from the Kitchen pulling a pan of the most glorious lookig taters I'd ever seen out of the oven. They were so golden brown and inviting, I swear to you they glistened like the shiniest of diamonds. I was immediately taken and knew I was going to write a recipe for Melting Potatoes right away.
Seared until crispy and beautiful and then baked in a bath of butter, stock, garlic, and herbs, the potatoes are both crispy and tender and frankly, the most beautiful potatoes I'd ever seen.
