I've yet to meet a potato I didn't like and hasselback potatoes happen to be one of my very favourite ways to enjoy potatoes. Each individual slice gets so crispy and delicious while the bottom portion of the potato stays creamy and delectable on the inside. They're perfect!
With that in mind, I decided to go ahead and make them mini for an addictive snack / app you won't be able to resist. Basted in oil, vinegar, parsley, and spices, these miniature taters get so crispy in the oven and look so cute to boot.
